Yield 6 servings/ serving size: 1/2 large carrot

Number Of Ingredients 7

6 large carrots, halved
3 tablespoons light soy sauce
3 tablespoons rice vinegar
2 cloves garlic, minced
2 teaspoons sesame oil
2 teaspoons minced fresh ginger root
¼ teaspoon Chinese five-spice powder

Steps:

  • Bring a large pot of water to boil, add the carrots and parboil for 5 minutes. Drain and rinse with cold water.
  • In a large glass dish, combine the remaining ingredients. Add the carrots and marinate for 30 minutes.
  • Prepare an outdoor grill with an oiled rack set 4 inches from the heat source. Using a oiled wire hinged vegetable basket or just directly on the rack ( whichever you find easier), grill the carrots, turning constantly for a total of 10 minutes, until slightly charred.

Carrots are very nutritious and suitable for children to eat. I wonder if my star is a little rabbit in my life. I especially love carrots. Every time I use carrots, he is always happy to help me plan carrots. The mint grown in silk grows super well. When mixing carrots, add a few leaves to mix it with a hint of coolness. It’s very comfortable to eat.

500 g carrot
Right amount White sesame
Right amount mint
Right amount sesame oil
Right amount Vinegar
Right amount salt
Right amount garlic

Steps:

  • Cut carrots into shreds
  • Put it in a bowl and sprinkle some salt
  • Squeeze out the water after salting for two hours
  • Raise the frying pan and add garlic paste
  • Add some white sesame seeds
  • Finally, add the chili sauce and stir in the oil
  • Pour the popped seasoning on top. To make it look better, I picked a few mint leaves and put them on top and added some sesame oil;
  • Add vinegar
  • Just mix it and you can eat it.

  • 1. To make the pickling liquid, combine vinegar and sugar in a heavy-based saucepan and stir over high heat until sugar dissolves. Bring to the boil, then reduce to a simmer and cook, uncovered and without stirring, for about 30 minutes or until reduced by one-third and slightly syrupy. Set aside to cool, then refrigerate overnight.

    2. Meanwhile, peel each carrot and cut in half crossways. Cut each piece into slices two millimetres thick, then into matchsticks. Place in a bowl, sprinkle with salt and mix well to combine. Cover and refrigerate overnight.

    3. The next day, drain the liquid from the carrots, squeezing well with your hands. Place carrots in a 1 litre capacity airtight jar or container, pour pickling liquid over to cover, add ginger, star anise and peppercorns. Refrigerate for one day to allow flavours to develop before using. The pickled carrot will keep for up to two weeks in the fridge.
