4 teaspoons olive oil
1 1/4 lbs medium raw shrimp, peeled and deveined (tails left on)
6 -8 garlic cloves, minced
1/2 cup low sodium chicken broth
1/2 cup dry white wine
1/4 cup fresh lemon juice
1/4 cup minced parsley
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
4 lemon wedges (garnish)
1 tablespoon minced parsley

Steps:

  • In a large nonstick skillet, heat the oil. Saute the shrimp until just pink, about 2-3 minutes. Add the garlic and cook stirring constantly, about 30 seconds. With a slotted spoon transfer the shrimp to a platter and keep them warm.
  • In the skillet, combine the broth, wine, lemon juice, 1/4 cup of the parsley, the salt and pepper; and bring it to a boil. Boil uncovered, until the sauce is reduced by half.
  • Spoon the sauce over the shrimp. Serve garnished with the lemon wedges and sprinkled with the remaining tablespoon of parsley.
  • Makes 4 servings.

1 pound shrimp (peeled and deveined)
3 tablespoons olive oil (divided)
5 cloves garlic (minced (divided))
1 ½ teaspoons salt
¼ teaspoon red pepper flakes
½ cup chicken broth
3 tablespoons lemon juice
½ cup butter
¼ cup parsley (finely chopped)

Steps:

  • To a large bowl, combine the shrimp, 1 tablespoon of the olive oil, 2 cloves of the garlic, and salt. Toss to coat and marinate for 20 minutes.
  • Heat remaining olive oil in a frying pan over medium heat. When hot, add shrimp and cook 1-2 minutes per side until shrimp are just pink. Remove shrimp with a slotted spoon to leave liquid in the pan. (If cooking from frozen, see note*)
  • Add the remaining garlic and red pepper flakes to the pan. Cook until fragrant, about 30 seconds.
  • Add broth and lemon juice. Cook until reduced by half, about 5 minutes.
  • Add butter and cook until melted and the sauce thickens. Add shrimp back to the pan. Sprinkle with parsley and warm for 1-2 minutes before serving. Serve over pasta or with french bread, if desired.
