1 lb medium shrimp, peeled and deveined
1 tablespoon pure olive oil
2 tablespoons garlic, finely chopped
1 1/2 cups white wine, I use chardonnay
1/2 fresh lemon, Juice only
1 teaspoon italian seasoning
1/2 cup softened butter
1 tablespoon parsley
1/2 cup grated parmesan cheese

Steps:

  • Heat cast iron skillet and add olive oil.
  • Add shrimp and cook until tender and no longer translucent, reduce heat. Remove Shrimp and set aside.
  • Add garlic and cook 2-3 minutes. Do not allow garlic to brown - it will make it bitter.
  • Add white wine, and lemon juice.
  • Cook until wine is reduced by half. After it is reduced, add Italian seasoning.
  • Reduce heat to low, and add butter. If pan is too hot, the butter will separate.
  • Add shrimp back into sauce, add parsley, and season to taste with salt and pepper.
  • Sprinkle with grated Parmesan Cheese.

If you love shrimp scampi (and who doesn't?), look no further than this super-easy recipe. The whole dish—spaghetti + garlicky shrimp—comes together in 20 minutes or less.

spaghetti

3 tbsp.

butter

cloves garlic, minced

1 lb.

medium shrimp, peeled and deveined

1 c.

dry white wine

Juice of 2 lemons, plus zest of 1

1 tsp.

crushed red pepper flakes

kosher salt

Freshly ground black pepper

Fresh parsley, for garnish

Steps:

  • In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain, reserving 1/2 cup pasta water, and return to pot. Meanwhile, in a large skillet over medium heat, melt butter. Add garlic and cook until fragrant, 1 minute, then add shrimp and cook until pink, 3 minutes. Add wine, lemon juice and zest, and red pepper flakes. Season with salt and pepper. Add spaghetti and toss to coat, adding reserved pasta water 1 tablespoon at a time until saucy. Garnish with parsley before serving.
