Shrimp and vermicelli in clay pot recipe - Simple Chinese Food image

Shrimp vermicelli pot is a home-cooked dish. The main ingredients are fresh shrimp and vermicelli. I used Jiwei shrimp. The fans chose the better cooked Longkou vermicelli. Its method is also very simple, it can be said that from the selection of ingredients to the specific operation, it does not require too advanced cooking skills.

14 Kewei Shrimp
100 g Rice noodles
3 petals garlic
1/4 teaspoon Chicken Essence
2 tablespoons Salad oil
3 slices ginger
a little pepper
2 tablespoons Erguotou or cooking wine
1 tablespoon Soy sauce
1 tsp Sugar
1/8 teaspoon salt
1 tablespoon Oyster sauce

Steps:

  • Soak the vermicelli in cold water to soften and drain. Shred ginger, cut garlic into small slices or mince
  • Jiwei shrimp trimming must remove the intestinal mud, clean and drain the water
  • Put the Jiwei shrimp into a large bowl, add 1 tablespoon Erguotou, a little salt, and marinate for 10 minutes
  • Cold pan, cold oil, add the marinated Jiwei shrimp, stir fry to change color, and set aside
  • Leave the bottom oil in the wok, add shredded ginger, garlic slices, and oyster sauce, and stir until fragrant
  • Add appropriate amount of water, light soy sauce, salt, sugar, Erguotou, pepper, and boil on high heat
  • Add vermicelli, stir-fried prawns, simmer for a while

12 shrimp
3 ounces woonsen (bean thread/glass noodles)
3 strips bacon (cut into 1" pieces)
1 cup chinese celery (cut into bite sized pieces)
2 Tablespoons ginger (sliced thinly)
1 Tablespoon garlic (sliced thinly)
1 Tablespoon black peppercorns (use half if you prefer less spice)
2 cilantro roots
2 Tablespoons oyster sauce
1 Tablespoon thin soy sauce
1 Tablespoon dark soy sauce
1 teaspoon sesame oil
3/4 cup water

Steps:

  • Soak the woonsen noodles in warm water for ~10 minutes while you prepare the other ingredients.
  • Make your spice paste by pounding the garlic, ginger, black peppercorns, and cilantro roots together in a mortar and pestle. Add the peppercorns last so that they are coarsely broken.
  • Make your soy sauce mixture by combining the oyster sauce, soy sauces, sesame oil, and water.
  • Assemble your clay pot as shown above (from bottom to top: bacon pieces, a few thin slices of ginger, the spice paste, soaked woonsen noodles, shrimp, soy sauce mixture, and Chinese celery).
  • Place on stove top with a heat diffuser and cook over medium-high heat for 20 minutes. Note: If you prefer the vegetables to still be a little crisp (like I do), add them in with 5 minutes left to cook.
  • Once the clay pot is done, mix all ingredients together and enjoy!

  • CILANTRO PESTO: Using a mortar and pestle or possibly a spice grinder, crush or possibly grind the peppercorns to a fine pwdr. Combine the pepper, cilantro roots and garlic; work the three ingredients into a fairly smooth paste in the mortar or possibly in a small blender or possibly food processor. If you use a blender or possibly food processor, you may need to add in a little vegetable oil or possibly water to ease the grinding. Make about 1/4 c.. For an industrial strength batch use 1 tb peppercorns, 1/2 c. cilantro roots and 1/2 c. garlic. To store the pesto for later use, put in a glass jar, pour a little oil onto the surface to cover it and seal tightly. It will keep nicely for about 1 week in the refrigerator. CLAY POT SHRIMP: Place the noodles in a large bowl and add in hot water to cover. Soak the noodles till they become limp and white, about 15 min. Drain and set aside. You should have about 5 c. softened noodles. In a large clay pot or possibly flameproof, heavy-bottomed casserole, heat the oil over medium heat till warm, about 1 minute. Add in the pesto and stir-fry till fragrant, about 1 minute, adding a little more oil if it sticks or possibly burns. Add in the ginger and shrimp and stir-fry for 1 minute. Toss in the green onion, turning the mix once more. Transfer the shrimp to a plate and set aside while you prepare the noodles and sauce. In a small bowl, combine the chicken stock, fish sauce (Nam Pla), oyster sauce, rice wine, soy sauce, sesame oil, sugar and salt; stir to mix well. Place the soaked noodles in the clay pot in that you cooked the shrimp mix. Scrape the shrimp mix over the noodles and pour in the chicken stock mix. Toss the noodles and shrimp a little to combine them with the sauce, then cover the pot tightly. Place the clay pot over medium heat and cook till the noodles are soft and clear and the shrimp is done, about 10 min. Sprinkle with the cilantro leaves and serve at once.
