This delicious soup was a favorite of mine while attending college. My family has been enjoying it ever since! Very easy and quick to make. It includes stew meat, mixed vegetables and egg noodles in a beef broth base.

1 pound cubed beef stew meat
1 cup chopped onion
1 cup chopped celery
¼ cup beef bouillon granules
¼ teaspoon dried parsley
1 pinch ground black pepper
1 cup chopped carrots
5?¾ cups water
2?½ cups frozen egg noodles

Steps:

  • In a large saucepan over medium high heat, saute the stew meat, onion and celery for 5 minutes, or until meat is browned on all sides.
  • Stir in the bouillon, parsley, ground black pepper, carrots, water and egg noodles. Bring to a boil, reduce heat to low and simmer for 30 minutes.

Ready in just 30 minutes, these Shanghai fried beef noodles make a great, easy meal for two midweek

soy sauce 3 tbsp
shoaxing rice wine 2 tbsp
oyster sauce 2 tbsp
golden caster sugar 2 tsp
cornflour 2 tsp
fresh or straight-to-wok udon noodles 300g
lean frying steak 300g, cut into strips
groundnut or sunflower oil for frying
ginger a small chunk, peeled and shredded
spring onions 4, chopped (keep some green bits for garnish)
red chilli 1, chopped
pak choy 200g, shredded

Steps:

  • Mix the soy, wine, oyster sauce and sugar until the sugar dissolves. Mix the cornflour with 2 tbsp water then stir into the sauce.
  • If using straight-to-wok noodles put them in a colander and pour over a kettle of boiling water. This will loosen them up a bit and get rid of any coating. Fresh noodles are fine to add as they are.
  • Toss the steak with 1/2 tbsp oil. Heat a wok or pan to high then sear the steak for 2-3 minutes. Scoop the steak out of the pan then add the ginger, spring onions and chilli with another splash of oil and stir-fry for a couple of minutes.
  • Add the pak choy and cook until just wilted. Tip in the sauce and noodles with the steak and any juices. Toss until heated through and the sauce thickens slightly. Serve in warm bowls sprinkled with the spring onion greens.

  • To make the marinade, mix all ingredients in a bowl. Add beef, cover and refrigerate for an hour.

    Bring a saucepan of water to the boil. Drop in noodles, then stir to ensure they are not clumping together. Simmer for three minutes and drain in a colander in the sink, then run under cold water.

    Shake to drain, then add a few drops of the peanut oil and mix through. Set aside.

    Mix together oyster sauce, dark soy sauce and sugar and set aside.

    Heat a wok over high heat, then splash in remaining oil. Stir-fry sliced pepper for one minute.

    Add beef and marinade and stir-fry for one minute. Add noodles and garlic chives and stir-fry for about two minutes or until noodles are aglossy brown and everything is hot.

    Tip in oyster sauce mixture and stir to mix.Serves two* A spade-like utensil with a long handle used for stir-frying.
