This rich and creamy pasta dish is the epitome of satisfying Italian comfort food. Since it's a quick 35 minutes to make, why not make it for dinner tonight?

1 tablespoon extra-virgin olive oil
7 boneless, skinless chicken thighs, cut into 1-inch pieces (2 pounds total)
Coarse salt and ground pepper
1 medium yellow onion, diced medium
2 garlic cloves, minced
2 cups heavy cream
1 pound pappardelle

Steps:

  • In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper and cook until it releases its juices and is almost cooked through, about 7 minutes. Add onion and cook until translucent, stirring occasionally, about 6 minutes. Add garlic and cook until fragrant, about 30 seconds. Add cream and bring to a boil. Reduce heat to a rapid simmer and cook, stirring occasionally, until sauce is thick enough to coat the back of a spoon, about 15 minutes. Season to taste with salt and pepper.
  • Meanwhile, in a large pot of boiling salted water, cook pasta until al dente. Reserve 1 cup pasta water; drain pasta and add to sauce, tossing to combine and adding enough pasta water to create a creamy sauce that coats pasta. Serve immediately.

    1. Heat a large frying pan over a medium heat and add a good few lugs of olive oil. When the oil’s hot, add the garlic and chilli and fry until lightly coloured.
    2. Drop in most of the basil – stand back as it will crackle and spit in the oil – and then, after a few seconds, add the tomatoes. Bring to the boil and simmer for about 5 minutes. You’ll end up with a chunky sauce – if you like it smoother, pass the sauce through a coarse sieve. Taste the sauce and season with salt and pepper. Keep warm.
    3. Bring a large pan of salted water to the boil. On a lightly floured work surface, cut the lasagne sheets into strips with a knife or a pastry wheel. When the water is at a rolling boil, add the pasta and cook for a few minutes until just al dente.
    4. Drain the pasta strips in a colander, reserving a little of the cooking water.
    5. Stir the pasta into the warm sauce. If it’s a bit thick, add a few spoonfuls of the cooking water to loosen it up. Sprinkle with freshly grated Parmesan cheese and the reserved basil leaves and serve immediately.

  • In a large pot over medium heat, heat oil. Add onion, carrots, and celery and cook until soft, 5 minutes. Season with salt and pepper. Add garlic and cook until fragrant, 1 minute more. Add ground beef. Break meat up with a wooden spoon and cook until no longer pink. Drain. grease.  Return pot over medium heat and season with salt and pepper. Add tomato paste and stir until meat and vegetables are well coated. Add wine and cook until almost completely reduced, about 2 minutes.  Add crushed tomatoes, then pour water into can and swirl water around the can to catch the extra tomato juice. Pour into pot along with oregano and red pepper flakes. Season with more salt and pepper. Bring sauce to a boil, then reduce heat and let simmer for 1 hour.  Add milk, then return to a simmer and continue simmering for 30 more minutes. Add more salt and pepper as needed.  In a medium pot of boiling salted water, cook pasta according to package directions to al dente. Drain.  Spoon desired amount of bolognese over pasta and top with Parmesan.
