You can make this dish vegetarian by using 200g of drained, mashed chickpeas. Want to make this recipe spicy? Simply add a sprinkle of chilli powder.

0.25 cup(s) Rice, white, dry (jasmine)
210 g Pink salmon canned in brine
1 individual Green shallot(s) trimmed, thinly sliced
1 tsp Fresh lemon rind finely grated
1 medium Egg(s) lightly beaten
40 g Breadcrumbs
50 g Sugar snap peas chopped
1 cup(s) Cos lettuce leaves torn
8 individual Cherry tomatoes halved
0.5 medium Lebanese cucumber halved, thinly sliced
1 x 3 second spray(s) Oil spray
2 tsp Sweet chilli sauce
3 tsp Lemon juice

Steps:

  • Cook rice following packet instructions, cool slightly. Combine rice, salmon, shallot, rind and egg in a bowl.
  • Divide mixture into four portions and shape into patties. Spread breadcrumbs onto a plate. Pressing patties gently into breadcrumbs, coat evenly. Flatten out to 7–8cm in diameter.
  • Place sugar snap peas in a heatproof bowl, cover with boiling water. Stand for 2 minutes, drain, rinse under cold water. Drain again and pat dry with paper towels. Cut in half diagonally. Arrange lettuce, sugar snap peas, tomato and cucumber on serving plates.
  • Lightly spray a non-stick frying pan with oil over medium heat. Cook patties on one side for 2–3 minutes, or until browned. Spray patties with oil, turn and cook on the other side for 2–3 minutes. Combine sweet chilli sauce and juice and drizzle over salad. Serve patties with dressed salad.

This recipe is so simple and takes hardly any time at all. An easy go to dish that is nice when served with salad, quinoa, rice, or any veggies. If you need a quick and yummy salmon dinner/lunch, try this out. It would be nice served in a pita pocket with lettuce, tomato, etc as well. If you use plain bread crumbs, mix in a handful of fresh chopped parsley.

12 ounces skinless boneless salmon (sold in 6 oz cans or packets)
1/2 medium onion, chopped
1/2 cup breadcrumbs, seasoned or 1/2 cup breadcrumbs, plain
1/4 cup chopped parsley (optional)
2 eggs, beaten
2 tablespoons unsalted butter
3 tablespoons olive oil
salt
pepper

Steps:

  • Saute onions in 1 TBS olive oil until cooked through but not brown.
  • Drain liquid from the salmon.
  • Combine salmon, sauteed onion, breadcrumbs (parsley if you use plain breadcrumbs), eggs, salt, and pepper.
  • Form mixture into patties.
  • Melt butter and oil in a pan.
  • Brown salmon patties on both sides (about 4-5 minutes per side).
  • Place cooked patties on a paper towl to absorb excess oil.
