All you need to make a great carrot salad are fresh herbs and a kick-ass dressing.

Number Of Ingredients 9

6 medium carrots washed and peeled
1 large handful fresh coriander leaves picked
4 teaspoons sesame or poppy seeds toasted
1 orange zest and juice of
2 lemons
extra virgin olive oil
2 heaped tablespoons sesame seeds toasted
sea salt
freshly ground black pepper

Steps:

    1. First of all, slice the carrots or cut them up into fine ribbons, matchsticks or batons. Put them into a salad bowl with the coriander leaves and the sesame or poppy seeds.
    2. To make the dressing, finely grate the zest of the orange into a bowl. Add the orange juice, the juice of 1½ lemons and about 4 times that amount of extra virgin olive oil.
    3. Pound your toasted sesame seeds to a pulp in a pestle and mortar, then add to the dressing. Mix well, then season to taste with salt, pepper and possibly more lemon juice to make it nice and zingy so that you can taste it once you've dressed the salad.
    4. Once the salad is dressed, the flavour of the lemon will lessen, so get eating straight away.

This is a wonderful garbanzo bean salad with cumin and coriander (cilantro) that my grandmother used to make!

2 cloves garlic, minced
¼ teaspoon salt
½ cup olive oil
2 tablespoons fresh lemon juice
2 teaspoons white wine vinegar
1?½ teaspoons grated fresh ginger root
1 teaspoon ground cumin
¼ teaspoon ground cayenne pepper
4 (19 ounce) cans garbanzo beans, drained
2 yellow bell peppers, seeded and chopped
1 bunch green onions, thinly sliced
½ cup finely chopped fresh cilantro

Steps:

  • In a bowl, crush together the garlic and salt. To prepare the dressing, mix in olive oil, lemon juice, vinegar, ginger, cumin, and cayenne pepper.
  • In a separate bowl, stir together the garbanzo beans, yellow bell peppers, green onions, and cilantro. Mix in the dressing. Cover, and chill in the refrigerator 8 hours, or overnight.
