I love Waldorf salad and with this recipe it will be back on my table this summer. Cooking time is chill time.

1 teaspoon lemon juice
2 1/2 cups diced apples
1 cup celery, in thin strips about 1-inch long
1/2 cup broken walnuts
1 tablespoon Splenda granular (sugar substitute)
1 dash salt
1/2 cup low-fat vanilla yogurt
2 tablespoons low-fat mayonnaise
crisp lettuce leaf

Steps:

  • Drizzle lemon juice over diced apples; toss well.
  • Mix in celery and walnuts.
  • Blend together sugar, salt, low-fat yogurt and mayonnaise.
  • Fold into apple mixture; chill.

1 teaspoon yellow mustard
1 tablespoon apple cider vinegar
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 (12-ounce) box whole wheat spirals or elbow macaroni, cooked according to package directions, drained and rinsed
1/2 cup chopped red bell pepper
1/2 cup chopped scallion
1/2 cup chopped celery

Steps:

  • In a small bowl, combine mayonnaise, sour cream, mustard, vinegar, salt, and pepper; mix well.
  • In a large bowl, combine pasta, bell pepper, scallion, and celery. Add dressing to pasta; toss until evenly coated.
  • Refrigerate 1 hour before serving.
