This is a massive Oliver family favourite – everyone loves building their own pancakes and roast duck is such a treat. I get my pancakes from a Chinese supermarket or online, but if you can’t find them, use iceberg lettuce leaves instead.

1x 2 kg whole duck, giblets reserved
1 red onion
olive oil
Chinese five-spice powder
1 clementine
4 spring onions
4 small carrots
½ a cucumber
1 fresh red chilli
1 mixed bunch of fresh mint and coriander (30g)
1 lime
18 Chinese pancakes
2 cloves of garlic
5 cm piece of ginger
200 g frozen cranberries
2 tablespoons low-salt soy sauce
2 tablespoons rice wine vinegar
2 tablespoons runny honey
2 clementines

Steps:

    1. Get your meat out of the fridge and up to room temperature before you cook it. Preheat the oven to 180oC/350oF/gas 4.
    2. Peel the onion, cut into wedges and place in a roasting tray with the giblets and a splash of water.
    3. Rub the duck all over with 1 tablespoon of oil, 1 tablespoon of Chinese five-spice and a really good pinch of sea salt.
    4. Halve the clementine and place in the cavity, then sit the duck directly on the bars of the oven, with the tray of onions and giblets underneath to catch the tasty fat.
    5. Roast for 2 hours, or until the duck is crispy and cooked through, turning the onions occasionally to prevent them from catching.
    6. While the duck cooks, prep the garnishes. Trim and halve the spring onions and carrots, then finely slice lengthways, scratch a fork down the cucumber, and finely slice it with the chilli. Pick the herb leaves. Cut the lime into wedges.
    7. Remove the cooked duck to a platter, cover, and rest for 30 minutes. Pour all the fat from the tray into a jar, cool, and place in the fridge for tasty cooking another day.
    8. Now you’ve got a choice: you can make a dark hoisin utilizing the bonus flavour from the tray, or you can do it separately in a pan to achieve the vibrant colour you see in the picture – both ways are super-tasty, it’s purely personal preference.
    9. Using the tray, remove and discard the giblets, leaving the onions behind. Place over a medium heat on the hob, peel, roughly chop and add the garlic and ginger, add 1 teaspoon of five-spice, then stir in the cranberries, picking up all the sticky goodness from the base of the tray.
    10. Cook for 2 minutes, then add the soy, rice wine vinegar, honey, clementine juice and a splash of water. Simmer for 5 minutes, or until thick and glossy.
    11. Pour into a blender and blitz until smooth, then taste and season to perfection.
    12. If you’re doing it in a pan, just follow the instructions above, adding a splash of oil to the pan before the garlic, ginger and five-spice.
    13. In batches, warm the pancakes in a bamboo steamer over a pan of simmering water for just 1 to 2 minutes.
    14. Slice the duck meat, or get two forks and ravage it all off the bone. Serve everything in the middle of the table so everyone builds their own. The crispy duck skin will be an absolute treat dotted on top!

This Instant Pot Pot Roast With Vegetables is the best pot roast I have ever made! Thanks to the Instant Pot, it cooks up in a fraction of the time while giving you incredibly tender meat along with carrots and potatoes in a rich, super flavorful gravy.

1 3-pound boneless chuck roast
1 tablespoon kosher salt
1½ teaspoons black pepper
1 teaspoon garlic powder
½ teaspoon onion powder
2 tablespoons olive oil (or vegetable oil)
3 cups beef broth (I use 3 cups water plus 3 teaspoons Better Than Bouillon Roasted Beef Base)
2 pounds carrots (peeled and cut into 1-inch pieces)
2 pounds Yukon gold or red potatoes (cut into 1-inch pieces, peeled if desired)
2 tablespoons cornstarch
2 tablespoons cold water

Steps:

  • Combine the salt, pepper, garlic powder, and onion powder in a small bowl. Season the chuck roast on all sides with all of the seasoning mixture.
  • Using the Instant Pot SAUTE function at its highest heat setting, heat the olive oil until the Instant Pot reads HOT. Add the chuck roast and sear on both sides until very nicely browned, about 4 minutes per side.
  • Remove the roast from the Instant Pot to a plate.
  • Add the beef broth to the Instant Pot. Using a wooden spoon, scrape up all of the browned bits from the bottom of the pot.
  • Return the roast to the Instant Pot. Put the lid on, make sure the steam release valve is set to SEALING, and cook on HIGH pressure for 45 minutes. Note: It will take the Instant Pot about 10 minutes to come to pressure before the cooking time begins to count down. When the cooking time has finished, immediately and carefully quick-release the pressure.
  • Add the carrots and potatoes to the Instant Pot. Press the vegetables down into the broth as best as you can (it's okay if they are not all covered). Put the lid on, make sure the steam release valve is set to SEALING, and cook on HIGH pressure for 5 minutes. Note: It will take the Instant Pot about 10 minutes to come to pressure before the cooking time begins to count down. When the cooking time has finished, turn off the Instant Pot and allow the pressure to naturally release for 20 minutes, then quick-release any remaining pressure.
  • Remove the meat, carrots, and potatoes to a serving dish. Using two forks, shred the meat. Cover with foil and keep warm.
  • Using the SAUTE function of the Instant Pot, bring the broth to a boil.
  • In a small bowl, combine the cornstarch and cold water to make a slurry. While constantly stirring the broth, add the slurry. Cook, stirring occasionally, for 2 to 3 minutes or until the gravy has thickened slightly. Note: I don't make a super-thick gravy. If you would like your gravy thicker, just add more cornstarch slurry.
  • Serve the pot roast, carrots and potatoes with the gravy and ENJOY!

    6. Put a large roasting tray over a medium heat and either add a few generous lugs of olive oil or carefully spoon a little of the fat from the meat you’re cooking, and add the garlic and rosemary.
    7. Tip the vegetables into the tray, season with a good pinch of sea salt and black pepper and turn the veg over to coat them in the flavours. Spread them out evenly into one layer – this is important, as you want them to roast, not steam as they will if you have them all on top of each other.
    8. Roast for 1 hour, or until golden and crisp, then serve immediately with your roast and some delicious gravy.

    1. If you’re worried about cooking the perfect Christmas turkey because you’re afraid you’ll get it wrong, don’t be. This recipe is nice and simple and will help you achieve brilliant results for your Christmas meal.
    2. Take your turkey out of the fridge about an hour before you’re ready to cook it so it comes up to room temperature before roasting. Give it a good rinse then pat it dry with some kitchen paper, making sure you soak up any water in the cavity. Drizzle the meat with a good lug of olive oil, add a few good sprinkles of salt and pepper and then rub this seasoning all over the bird, making sure you get in to all the nooks and crannies.
    3. Preheat your oven to full whack then get started on your stuffing. Pour a lug or two of olive oil into a large pan on a medium heat and fry off your chopped onion for about 10 minutes or until softened. Stir in a good pinch of salt and pepper, the ground nutmeg and your chopped sage leaves, then continue to fry and stir for another minute or two.
    4. Spoon the onion mixture into a large bowl and let it cool completely. Once cooled, add your pork mince and breadcrumbs and use your hands to really scrunch everything together. Once it’s mixed really well, bring the stuffing together into a ball, then cover and chill until you’re ready to stuff your turkey.
    5. Pull the skin at the neck-end back so you can see a cavity and push about half of your stuffing inside your turkey. Not too much: you don’t want to pack it so tightly it slows down the cooking. Once done, pull and fold the skin over the opening and tuck it under the bird so it looks nice.
    6. Turn the turkey around and drop a few small pieces of stuffing into the larger cavity along with your clementine halves and a few sprigs of rosemary. Place your roughly chopped veg in the bottom of a roasting pan and lay your turkey on top. Cover the turkey with tin foil then put it in the hot oven and immediately turn the temperature down to 180°C/350°F/gas 4. Cook for about 35 to 40 minutes per kilo. The 5kg bird in this recipe will take about 3 to 3½ hours.
    7. Check on your turkey every 20 minutes or so and keep it from drying out by basting it with the lovely juices from the bottom of the pan. After 2½ hours, remove the foil so the skin gets golden and crispy.
    8. When the time is up, take your turkey out of the oven and stick a small sharp knife into the fattest part of the thigh. If the juices run clear and the meat pulls apart easily, it’s ready. If not, pop the turkey back in the oven to cook for a bit longer then check again. When you're confident it's cooked, rest the turkey for at least 1 hour, preferably 2 hours for bigger birds. Meanwhile you can get your veg and gravy ready.
