Wrap refrigerated biscuits around purchased meatballs for a super-easy, crowd-pleasing appetizer.

2 cans (6 oz) refrigerated Pillsbury™ Flaky Layers Buttermilk Biscuits (5 Count)
10 frozen cooked Italian-style meatballs (about 5 oz), thawed, each cut in half
2 sticks (1 oz each) string cheese, each cut into 10 pieces
1 tablespoon grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1 cup marinara sauce, heated

Steps:

  • Heat oven to 375°F. Separate dough into 10 biscuits. Separate each biscuit into 2 layers. Press each biscuit layer into 3-inch round.
  • Place 1 meatball half, cut side up, and 1 string cheese piece in center of each dough round. Wrap dough around meatball and cheese, pressing edges to seal. In ungreased 8- or 9-inch round cake pan, place seam side down in single layer.
  • Sprinkle evenly with Parmesan cheese, Italian seasoning and garlic powder.
  • Bake 20 to 25 minutes or until golden brown and biscuits are no longer doughy in center. Serve warm biscuits with warm marinara sauce for dipping.

These meatballs are truly special. They are covered in a biscuit with spaghetti sauce and cheese, with drizzled in a wonderful buttery garlic sauce and baked to perfection. You can use leftover meatballs, freshly made meatballs or even thawed, frozen meat

12 oz. can Pillsbury Homestyle Butter Tastin' refrigerated biscuits
8 cooked Italian-style meatballs (if using frozen, let thaw completely)
1 c. marinara/spaghetti sauce and more for dipping
1 c. shredded Italian blend cheese
4 T. butter, melted
2-3 garlic cloves, minced
1/2 t. Italian seasoning
pinch of salt

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper or a silicone baking mat. Set aside. Using your hands or a rolling pin, flatten each biscuit into a 4 inch round. Place 1 meatball and 2 T. sauce in center of each round; top with 2 T. cheese. Wrap dough around meatball and cheese, pressing edges to seal. Place seam side down on prepared baking sheet, leaving room for spreading. Repeat until all biscuits and meatballs have been finished. In a small bowl, whisk together melted butter, garlic, Italian seasoning and salt; evenly spoon on top of each biscuit. Bake 18 - 20 minutes, or until golden brown. Serve hot. Makes 8. **If desired, have a little warmed spaghetti/marinara sauce on the side for dipping.

  • Preheat oven to 350° and line a medium baking sheet with aluminum foil.  In a large bowl, combine ground beef, egg, 2 tablespoons parsley, garlic, Italian seasoning and red pepper flakes. Season with salt and pepper and stir to combine. Divide meat into 16 portions, then roll each into a ball. Use your thumb to make a whole in each meatball, then stuff with a piece of string cheese. Roll ball in your hand to insure cheese is completely inclosed.  Repeat until all meatballs are filled with cheese and place on baking sheet. Bake for 25 minutes, then let cool slightly. Turn oven up to 400° and grease a medium baking dish with cooking spray. Remove biscuits from can and using a serrated paring knife, cut the biscuit in half horizontally, creating two rounds. Using your palms, flatten biscuit until it is large enough to wrap around meatball. Place one meatball in the center of each biscuit round, then wrap dough to completely cover the meatballs. Pinch to seal and place in prepared baking dish, and repeat until all meatballs are covered in biscuit dough. In a small bowl, whisk to combine melted butter, parmesan, and remaining parsley. Brush all over stuffed biscuits and bake until golden, 15 to 20 minutes more. Garnish with parmesan and parsley and serve.

So many layers of goodness in this recipe! The flavors are fabulous. And the cheese in the middle is a wonderful treat. Eat these as a main course, or make them a bit smaller for an appetizer. They are delicious! Don't forget... all ovens are different. In the Test Kitchen, after 40 minutes the bacon was not as crispy as I like. So I raised the temp to 425 and baked another 15 minutes. They came out perfect.
