This lasagna recipe is super simple to make, and so flavorful. It's perfect for potlucks and other large gatherings. You'll never need another lasagna recipe!

cans (6 ounce) tomato paste

grated (not shredded) Parmesan cheese

package (10 ounce) lasagna noodles

1 lb.

sliced mozzarella cheese

Steps:

  • Bring a large pot of water to a boil. Meanwhile, in a large skillet or saucepan, combine ground beef, sausage, and garlic. Cook over medium-high heat until browned. Drain half the fat; less if you’re feeling naughty. Add tomatoes, tomato paste, 2 tablespoons parsley, basil and 1 teaspoon salt. After adding the tomatoes, the sauce mixture should simmer for 45 minutes while you are working on the other steps. In a medium bowl, mix cottage cheese, beaten eggs, grated Parmesan, 2 more tablespoons parsley, and 1 more teaspoon salt. Stir together well. Set aside. Add 1/2 teaspoon salt and the olive oil to the boiling water, then cook the lasagna noodles until “al dente” (not overly cooked). Drain.  To assemble: Arrange 4 cooked lasagna noodles in the bottom of a baking pan, overlapping if necessary. Spoon half the cottage cheese mixture over the noodles. Spread evenly. Cover cottage cheese with a layer of mozzarella cheese. Spoon a little less than half the meat/sauce mixture over the top. Repeat, ending with meat/sauce mixture. Sprinkle top generously with extra Parmesan. Either freeze, refrigerate for up to two days, or bake immediately: 350-degree oven for 20 to 30 minutes, or until top is hot and bubbly.

2 garlic cloves, minced
2 tablespoons dried parsley flakes
2 tablespoons dried basil
1 teaspoon salt
2 (14 1/2 ounce) cans whole tomatoes
2 (6 ounce) cans tomato paste
3 cups cottage cheese
2 eggs, beaten
1/2 cup parmesan cheese
1 teaspoon salt
2 tablespoons dried parsley flakes

Steps:

  • In a large skillet, brown meat with garlic, drain half the fat, and add the next 6 ingredients.
  • Simmer uncovered, 45 minutes.
  • Boil one 10 oz package lasagna noodles with 1/2 teaspoon salt and 1 tablespoon olive oil. Cook noodles al dente.
  • Combine in a bowl: cottage cheese, eggs,Parmesan Cheese, salt, dried parsley flakes
  • Place 4 noodles in a baking dish.
  • Spread half the cottage cheese mixture over the noodles.
  • Add 1/2 pound of mozzarella slices, and a little less than half the meat mixture.
  • Repeat the layers, ending with the meat mixture.
  • Sprinkle generously with Parmesan and bake 20 to 30 minutes at 350 degrees until hot and bubbly.
  • Let stand 10 to 15 minutes before cutting into squares, unless your family is wigging out with hunger -- in which case, go ahead and dig inches.

  • Preheat oven to 350 degrees. Cook noodles according to package directions. Drain and lay flat on a sheet of aluminum foil.  Heat olive oil in a large skillet over medium heat. Add onions and garlic and cook for a minute. Add diced red peppers and saute for another minute or so. Add squash and mushrooms and cook for a few minutes. Pour in wine, add salt, pepper, and red pepper flakes, and stir.  Pour in tomatoes. Use hands to squeeze/crush them. Stir to combine and let simmer for 20 minutes or so. Stir in chopped parsley.  In a separate bowl, combine ricotta, eggs, Parmesan cheese, salt, and pepper.  To assemble, spread a little of the vegetable/tomato sauce in a lasagna pan. Layer four cooked noodles in the pan, slightly overlapping them if necessary. Spread 1/3 of the ricotta mixture on the noodles. Top the ricotta mixture with mozzarella slices. Spoon a little less than 1/3 of the veggie/sauce mixture over the mozzarella.  Repeat the layering two more times, ending with a large helping of vegetable sauce and a sprinkling of Parmesan.  Bake at 350 degrees, covered in foil, for 20 minutes, then remove foil and continue baking for 5 to 10 minutes. Remove from oven and allow to stand for 10 minutes before cutting into squares and serving. Serve with crusty French bread.

  • Cook the pasta according to package directions, just to al dente. Drain in a colander set in the sink and then run cold water over the pasta to stop the cooking. Let drain.While pasta is cooking, brown pork sausage and ground beef in a very large skillet with tall sides over medium to medium-high heat, breaking up clumps as the meats cook. Once meats have almost cooked through (with just a bit of pink left in the centers), drain and discard excess fat from skillet. Stir in onion and garlic and cook until onion is softened and translucent, about 5–7 minutes. Stir in diced tomatoes, tomato sauce, and tomato paste, along with oregano, basil, thyme, red pepper flakes, cayenne, salt, and pepper. Let simmer over medium-low heat for about 30 minutes, stirring occasionally. Fold in drained noodles, and then place half of the noodle mixture in a large casserole dish.Preheat oven to 375°F.In a medium bowl, whisk together ricotta and egg until well combined. Stir in 2 cups of the shredded mozzarella, 1/2 cup of the Parmesan, 2 tablespoons of the minced parsley, and 1/2 teaspoon of the kosher salt. Spread ricotta mixture evenly over the noodle mixture, leaving a 1-inch border of noodles around the edge (see photo in post). Then top ricotta mixture with the remaining noodles mixture. Cover hotdish with foil and bake for 30 minutes, or until hotdish is starting to bubble a bit. Then remove dish from oven and remove foil. Top hotdish with the remaining 2 cups of shredded mozzarella and the shredded cheddar. And finally, sprinkle remaining 1/4 cup of Parmesan over it all. Place in oven again and bake for another 10–15 minutes, uncovered, until cheeses are nicely melted and hotdish is bubbling hot. Then place hotdish under broiler for a few minutes, until cheeses are browned to your liking. Remove from oven and sprinkle with additional minced fresh parsley. Serve hot.

  • Heat the oil in a large skillet over medium-high heat. Season chicken with salt and herbs. Add chicken to the skillet and cook until golden brown. Remove the chicken to a plate.Add onions and garlic to the same skillet and cook, stirring, for 3 minutes. Add broth, then scrape the bottom of the skillet to loosen the bits. Cook for another 2-3 minutes to let the broth reduce. Add marinara sauce and red pepper flakes, then simmer for 10 minutes. Turn off the heat and add the cooked and drained pasta, ricotta, mozzarella, Parmesan, and basil. Add the cooked chicken on top. Toss to combine, then add more of any of the above ingredients until the sauce is just how you like it. Serve with a sprinkling of Parmesan and a little basil on top.
