This recipe was from my Junior High Home Ec class. I can't believe my mom has saved the recipe sheet for so many years. However, I am glad because we are still enjoying this easy recipe. The original recipe calls for Penne pasta but we like this with a types of pasta.

500 g round steaks, cut into thin thins
1 tablespoon oil
1 clove garlic, crushed
1 small onion, finely chopped
10 fresh mushrooms, sliced
1 green pepper, chopped
1 teaspoon basil
1 teaspoon thyme
1 teaspoon oregano
2 cups tomatoes, pureed or 2 cups tomato sauce
1/2 teaspoon pepper
300 -400 g pasta, cooked
1/2 cup parmesan cheese (optional)

Steps:

  • In a large skillet or a wok, stir fry beef strips in hot oil over high heat for 2 minutes.
  • Add garlic, onion, and spices and cook for 2 minutes longer, until beef is no longer pink.
  • Drain and then return to pan.
  • Stir in tomatoes and simmer for 10 minutes.
  • Add mushrooms and green pepper and cook for 5 minutes.
  • Serve over cooked pasta and top with Parmesan cheese if desired.

1 medium onion, chopped
1/4 cup finely chopped green pepper
1 tablespoon butter
1 pound beef top sirloin steak, cut into strips
1 can (8 ounces) tomato sauce
1 cup water
1/4 teaspoon salt-free seasoning blend
1/4 teaspoon dried thyme
1/8 teaspoon pepper
1/2 cup shredded part-skim mozzarella cheese
6 cups hot cooked spaghetti

Steps:

  • In a nonstick skillet, saute onion and green pepper in butter until tender; remove and set aside. In the same skillet, brown beef over medium heat until no longer pink; drain. Add the tomato sauce, water, seasoning blend, thyme, pepper and vegetables. Cover and simmer for 20-30 minutes or until meat is tender., Remove from the heat. Sprinkle with cheese; cover and let stand for 5 minutes or until cheese is melted. Serve with spaghetti.

  • Cook the pasta in rapidly, boiling salted water until just tender. Drain well and transfer to a serving platter. Season the beef strips with salt and pepper and brown in a little oil. Remove from the pan. Sauté the onion and chicory in the same pan until tender but still crisp. Add the beef strips and green peppercorns and season with the lemon juice and rind and sugar. Stir-fry until well blended and season with extra salt and pepper if necessary. Spoon over the pasta and serve.Serves 2-3.
