Fish Fillets with Almonds

½ cup almonds
2 tablespoons Hidden Valley® Original Ranch Salad® Dressing & Seasoning Mix Shaker
2 pounds fish
2 tablespoons olive oil
1 lemon
parsley

Steps:

  • Preheat an oven to 400°F. In a small bowl, mix almonds and seasoning together. Sprinkle both sides of fish evenly with the almond mixture, pressing to coat.
  • Arrange the fish on a lightly oiled baking sheet and drizzle with oil. Bake for 8 to 10 minutes, or until fish flakes when tested with a fork. Serve sprinkled with parsley and garnished with lemon wedges.

1 tablespoon extra virgin olive oil (15 ml)
2 teaspoons coarse sea salt (10 ml) or 2 teaspoons flake sea salt (10 ml)
1 1/2 teaspoons ground cumin or 1 1/2 teaspoons curry powder

Steps:

  • Preheat oven to 325°F.
  • Toss all ingredients together in a large bowl.
  • Line a baking sheet with parchment paper or foil.
  • Roast almond mixture until lightly toasted and skins are just beginning to split (about 20 minutes).
  • Let cool.
