Puff Pastry Quiche Lorraine Recipe - Food.com image

Please use only Swiss cheese for this recipe, I have made the mistake of using another kind of cheese and it just doesn't work! Purchase a 14-ounce (397 gram) package of puff pastry, and use half for this recipe. The original recipe for this does not call for garlic, but I like to add it in... of course, it is optional.

0.5 (14 ounce) package frozen puff pastry (use half of a 397 gram)
2 -3 tablespoons butter
1 large onion, chopped
2 -3 fresh minced garlic cloves (optional)
8 slices bacon, cooked and chopped (can use more if desired)
4 eggs
2 cups whipping cream (unwhipped)
salt (start with 1/2 teaspoon)
pepper
1 pinch nutmeg
1 pinch cayenne pepper
1 1/2 cups grated swiss cheese

Steps:

  • Set oven to 425 degrees (will reduce oven temperature later).
  • Prepare a 9-inch (deep-dish) pie plate.
  • In a frypan, melt butter and saute onion and garlic (if using) until soft.
  • In a large bowl, combine eggs, whipping cream and spices; beat until very well combined.
  • Roll out pastry to fit the pie plate.
  • Sprinkle the onion/garlic mixture into the bottom of the pie shell, then chopped bacon then top with grated cheese.
  • Carefully pour the egg mixture on top.
  • Bake at 425 degrees for 15 minutes.
  • Reduce heat to 300 degrees, and bake for about another 35-40 minutes, or until a knife inserted in the middle comes out clean.

This is a delicious expression of all that lovely, fresh spring produce out there – with bombs of goat’s cheese and crispy bacon, it’s incredible!

150 g asparagus
100 g fresh peas and broad beans podded
75 g baby spinach
2 spring onions
4 rashers higher-welfare smoked streaky bacon optional
4 large free-range eggs
150 ml double cream
150 ml semi-skimmed milk
½ a bunch of fresh chives
75 g goat's cheese
300 g plain flour plus extra for dusting
150 g unsalted butter at room temperature, cubed

Steps:

    1. To make the pastry, sift the flour and a good pinch of salt into a bowl, then rub in the butter with your fingertips until it resembles fine breadcrumbs. Gradually add 125ml of cold water, continuously mixing until it comes together to form a rough dough, adding a splash more water, if needed. Bring it together with your hands, wrap in clingfilm and place in the fridge to rest for 30 minutes.
    2. Preheat the oven to 180ºC/350ºF/gas 4. Snap off and discard the woody ends from the asparagus, then slice the stalks into 1cm chunks, reserving the tips. Blanch the asparagus (including the tips), peas and broad beans in a pan of boiling salted water for 1 minute, then drain. Roughly chop and stir in the spinach so it wilts slightly, then refresh the veg under cold running water. Drain well and place into a large bowl. Trim, finely slice and add the spring onions.
    3. Finely slice the bacon (if using), then add to a frying pan over a medium-high heat and fry for 5 minutes, or until golden, turning occasionally. Meanwhile, crack the eggs into a large bowl and whisk in the cream, milk and a good pinch of salt and pepper. Chop and stir in the chives.
    4. On a flour-dusted surface, roll out the rested dough to roughly ½cm thick. Roll the pastry up around the rolling pin, then carefully unroll it to cover a 23cm loose-bottomed tart tin. Gently press the pastry into the tart tin, moulding it to the tin as you go (don’t worry if it breaks – patch up any holes with spare pastry).
    5. Trim away any overhanging pastry, then line with a double layer of clingfilm. Fill nearly to the top with uncooked rice or beans, then bake in the oven for 12 minutes, or until lightly golden. Remove the rice or beans and clingfilm, then return the tart case to the oven for a further 8 to 10 minutes, or until golden and crisp.
    6. Spoon the greens into the pastry case, put the bacon pieces on top, pour in the cream mixture and crumble over the goat’s cheese. Place the quiche in the oven for 35 to 40 minutes, or until just set. Leave to cool slightly, then serve with a crisp green salad.

    1. Preheat the oven to 180ºC/350ºF/gas 4. Grease a 22cm loose-bottomed tart tin with a little butter, then set side.

Cook for a further 20 minutes, or until softened, adding the spinach for the final minute to wilt. Tip the veg and bacon mixture into a large jug. Grate and add the Cheddar, then add the eggs, crème fraîche and a pinch of salt and pepper. Stir well, then set aside.
    4. On a flour-dusted surface, roll out the dough to roughly ½cm thick. Carefully place into the tart tin and push it into the sides (don’t worry if it breaks – patch up any holes with spare pastry). Trim and discard the excess. Place a double layer of clingfilm on top and fill the tin with baking beans or uncooked rice. Place the tin on a baking tray, then pop in the hot oven for 10 to 12 minutes, or until lightly golden. Remove the beans and clingfilm, then return to the oven for a further 8 to 10 minutes, or until golden.
    5. Pour the filling into the baked pastry case, then return to the oven for 10 to 15 minutes, or until the filling is almost set. Leave to cool slightly, then carefully remove the tart tin and serve alongside a crisp, green salad.
