Layers of melting cheese and spicy chorizo make up this seriously OTT hot Mexican dip. Be prepared to fight over this one

olive oil
cooking chorizo 250g, skinned
spring onions 1 bunch, chopped
plum tomatoes 4, chopped
soft cheese 100g
strong cheddar 150g, grated
grated monterey jack cheese 150g pack
pickled jalapeños 2 tbsp, chopped
coriander a handful, chopped
tortilla chips for scooping

Steps:

  • Heat 1 tbsp olive oil in a pan. Pinch in nuggets of the chorizo and fry, breaking up with a spatula into smaller pieces as it cooks. Add half the spring onions and cook until softened, then stir in half the tomatoes and keep cooking until thickened and saucy.
  • Mix the cheeses together and season well.
  • Heat the oven to 200C/fan 180C/gas 6. Take a heavy, ovenproof pan and layer up the chorizo and cheese mixes. Bake for 15-20 minutes until melted and oozy. Mix the rest of the spring onions and tomatoes with the jalapeños and coriander. Scatter over the salsa and serve with tortilla chips for scooping.

¾ cup tomatoes, diced
2 tablespoons onion, minced
2 tablespoons jalapeño, minced
6 leaves fresh cilantro, chopped
6 ounces chorizo
½ cup onion, diced
6 ounces beer
8 ounces Crystal Farms Shredded Monterey Jack Cheese
8 ounces Crystal Farms Shredded Cheddar Cheese
Recommended Crystal Farms Product Substitution: Crystal Farms Monterey Jack Cheese

Steps:

  • For the pico de gallo salsa, mix the diced tomatoes, minced onion, jalapeño and cilantro to combine. Reserve.
  • In a sauté pan over medium-high heat, cook chorizo for 1 minute.
  • Add onions to pan and cook until translucent.
  • Remove chorizo and onion mixture from pan. Reserve.
  • Add beer to pan and bring to simmer.
  • Reduce to medium-low heat. Gradually add shredded Monterey Jack cheese and shredded Cheddar cheese to pan. Whisk to incorporate. Let each addition of cheese melt before adding more cheese.
  • Add chorizo back to pan and stir to combine.
  • Top with pico de gallo and serve.

Add another third of the cheese, then as much of the veggie mixture as you'd like (you may have a little left over.) Add almost all of the remaining cheese, the rest of the sausage, then whatever cheese you have left. Sprinkle the top very lightly with chili powder.NOTE: Depending on the size of your skillet or baking dish, you may have some ingredients left over. Just build so that the ingredients roughly reach the top of the skillet; they'll shrink quite a bit once the cheese melts!Place into the oven and start watching it about 4 to 5 minutes in. You want to bake it until the cheese is totally melted, hot, and slightly bubbling...but before the cheese starts to firm up/harden. (In other words, you still want the cheese to be extra gooey.)Remove from the oven, top with the diced tomatoes, sprinkle on the tomatoes, and serve immediately with tortilla chips!NOTE: Be sure to have everything ready so you can serve the queso fundido pretty much right out of the oven. It's best when piping hot! IMPORTANT: Wrap a cloth around the skillet handle so guests won't burn themselves.
