SWEET POTATO SKINS RECIPE | FOOD NETWORK KITCHEN | FOOD ...

Sweet Potato Skins Recipe | Food Network Kitchen | Food ... image

We love the combo of sweet potato and spicy salsa verde in this healthy version of an appetizer classic. Mash up the leftover scooped-out sweet potatoes and add them to a cheese quesadilla or regular twice-baked potatoes for a marbled effect.

Provided by Food Network Kitchen

Categories     appetizer

Total Time 3 hours 0 minutes

Cook Time 30 minutes

Yield 8 servings (3 pieces per person)

Number Of Ingredients 8

6 medium sweet potatoes (about 2 1/2 pounds)
3 tablespoon extra-virgin olive oil
1 cup shredded part-skim mozzarella
2 tablespoons grated Parmesan
2 scallions, thinly sliced
1/2 cup salsa verde
1/2 avocado, pitted and cut into small pieces
1 cup black bean chips, crushed

Steps:

  • Position an oven rack in the top of the oven, and preheat to 350 degrees F. Put the sweet potatoes on a rimmed baking sheet, and bake until fork-tender, 40 to 50 minutes. Let cool completely. (The potatoes can be baked, cooled and refrigerated a day ahead.) Split each in half lengthwise, and scoop out most of the flesh, leaving about a 1/4-inch border all around. (Save the scooped-out flesh for making mashed sweet potatoes later.)
  • Preheat the oven to 400 degrees F. Put a rack on a rimmed baking sheet. Arrange the potato skins skin-side up on the rack, and brush with 2 tablespoons of the oil. Bake until the skins are slightly browned, 20 to 30 minutes. Let cool completely, then cut each in half crosswise.
  • Arrange the pieces skin-side down on the rack, and sprinkle each with mozzarella, Parmesan and scallions. Bake until the mozzarella melts, 8 to 10 minutes. Remove the potato skins from the oven, and drizzle with the remaining tablespoon of oil. Top each with some salsa verde and avocado. Sprinkle with crushed chips.

SERIOUS POTATO SKINS RECIPE - NYT COOKING
There’s no trick to these loaded potato skins, and making them is a breeze. Pile them high with toppings and broil until they look like something you may have eaten at an Irish bar in the bad part of town during college, the game playing on a big screen above the bathroom doors. That bar was pretty good, you know.

  • Preheat oven to 400°. Line a large baking sheet with foil and lay the potatoes on top. Pierce all over with a fork, then rub the potatoes with olive oil and season with salt and pepper. Bake until the skin is crispy and the potato is tender, about 1 hour. Let cool slightly until cool enough to handle. Meanwhile, make filling: Heat a large skillet over medium-high heat, then add ground beef. Season with Worcestershire sauce, garlic powder, cayenne, salt, and pepper, and cook until the ground beef is no longer pink. Drain fat. Make sauce: In a small bowl, whisk together mayonnaise, mustard, ketchup, vinegar, and paprika until smooth. When the potatoes are cool enough to handle, cut them in half lengthwise, then cut each half crosswise. Scoop out the flesh with a spoon, leaving a ¼ inch by the skin. Return the potatoes, cut side up, to the baking sheet and brush with melted butter. Top with cooked ground beef, shredded Cheddar, and sesame seeds. Broil until the cheese is bubbling, about 3 minutes. Transfer skins to a server platter and top with chopped tomatoes, lettuce, and pickle relish. Drizzle with sauce and serve warm.

  • Preheat oven to 400 degrees. Scrub potatoes clean and allow them to dry. With a paper towel (or just with your hands) rub the skin of the potatoes with 2 tablespoons canola oil so that they're nice and moist. Place potatoes on a baking sheet and bake until skin is crisp and potatoes are tender, about 30 to 40 minutes. Remove the pan and allow to cool until you can handle the potatoes. Cut potatoes in half lengthwise. Scoop out the insides, leaving a little bit of potato in the skins. Melt the butter with 2 tablespoons canola oil, then brush both the outside and the inside of the potatoes. Sprinkle the inside lightly with salt. Place potato halves face-down and return to the oven for 5 to 8 minutes. Using tongs, turn the potatoes over and continue to bake until the edges of the potatoes start to turn golden brown. Remove from oven. Sprinkle the insides of the potato skins with cheddar, then sprinkle on the chopped bacon. Return to the oven long enough for the cheese to melt, about 3 to 4 minutes. Serve immediately with sour cream and green onions. Yum!
