Total Time 1 hours 30 minutes

Prep Time 1 hours

Cook Time 30 minutes

Yield 10 servings

Number Of Ingredients 6

5 lb.

russet or Yukon Gold potatoes

3/4 c.

butter

1

package (8 oz.) cream cheese, softened

1/2 c.

(to 3/4 cups) half-and-half

1/2 tsp.

(to 1 teaspoon) Lawry's Seasoned Salt

1/2 tsp.

(to 1 teaspoon) black pepper

Steps:

  • Peel and cut the potatoes into pieces that are generally the same size. Bring a large pot of water to a simmer and add the potatoes. Bring to a boil and cook for 30 to 35 minutes. When they’re cooked through, the fork should easily slide into the potatoes with no resistance, and the potatoes should almost, but not totally, fall apart. Drain the potatoes in a large colander. When the potatoes have finished draining, place them back into the dry pot and put the pot on the stove. Mash the potatoes over low heat, allowing all the steam to escape, before adding in all the other ingredients. Turn off the stove and add 1 ½ sticks of butter, an 8-ounce package of cream cheese and about ½ cup of half-and-half. Mash, mash, mash! Next, add about ½ teaspoon of Lawry’s Seasoning Salt and ½ a teaspoon of black pepper. Stir well and place in a medium-sized baking dish. Throw a few pats of butter over the top of the potatoes and place them in a 350-degree oven and heat until butter is melted and potatoes are warmed through.

SLOW COOKER MASHED POTATOES (THE PIONEER WOMAN) RECIPE ...
I wanted to make mashed potatoes, but I didn't want to be home to do it. So, slow cooker to the rescue. These were quite good, and other than peeling and cutting into chunks most of the work did itself in the slow cooker. I did take it out and put it in the mixer to get the chunks out because I didn't think the potato masher did enough. However, I could have used an emulsion blender too. Really delicious, and it was nice to come to already made mashed potatoes. I'm glad I doubled the recipe because these disappeared. Recipe posted as written.

  • Preheat the oven to 425 degrees. Prick each potato with a fork 3-4 times all over, then place on a sheet tray. Roast for 55 – 70 minutes until the potatoes are tender when pressed. Remove the potatoes from the oven and lower the temperature to 375 degrees. Meanwhile, working in two batches, cook the bacon in a large skillet over medium heat until golden and crispy, 6-8 minutes. Let the cooked bacon drain on a paper towel lined plate. Once cool, crumble or chop into small pieces. Place the melted butter, cream cheese, warm milk, and sour cream in a large bowl. Once the potatoes are cool enough to handle, cut them in half lengthwise, and scrape the flesh out of the skins and into the bowl. Tear or chop up three of the potato skins and add them to the bowl. Mash everything together with a potato masher. Fold in ½ of the bacon, ½ of the cheddar cheese, parmesan, and ½ of the chives. Grease a 3-quart casserole dish with butter. Transfer the potato mixture to the baking dish. Cover and bake for 35 minutes until the edges are bubbly. Top with the remaining bacon and cheese. Bake for 15-20 more minutes until warmed through and lightly golden on top. Let rest 10 minutes, then top with the remaining chives and serve.

  • Preheat oven to 425 degrees. Prick each potato with a fork, 3-4 times. Place on a baking sheet and roast for 1 hour 15 minutes, or until tender when pressed. Let rest until cool enough to handle. Reduce the oven temperature to 375 degrees. Place the butter in a large mixing bowl. Add the bacon and sour cream. With a sharp knife, cut each potato in half lengthwise. Scrape out the flesh of the potato and add it to the the mixing bowl, being careful not to tear the skin. (Leave a thin layer of potato intact all over the skin so that the filling has some support). Place the potato skins on a baking sheet. Using a potato masher, mash the potatoes into the butter, bacon and sour cream. Add 1 cup of cheese, milk, seasoned salt, ¾’s of the green onions and black pepper. Mix well to combine.  Fill the potato shells evenly with the mashed potato mixture. Divide the remaining 1 cup of cheese evenly over top of each potato piece. Bake the potatoes once again until golden brown on top and heated through, about 20 minutes. Top evenly with the remaining scallions and a little more black pepper before serving.

  • Put a cup of water in the insert pot of pressure cooker along with the wire rack. Put potatoes on the rack.Seal the Instant Pot, turning the steam release valve to “Sealing” and set it to high pressure for 6 minutes, depending on the thickness of potatoes. (I just use the “Manual” or “Pressure Cook” button.) If potatoes are closer to 2 inches or a little larger, cook for 7–8 minutes.Preheat oven broiler. While potatoes are cooking, put butter in a small saucepan or skillet and warm over medium heat until bubbly. Let it bubble for a few minutes until it just barely starts to turn a golden color. Add garlic, pepper flakes, and a pinch of salt and cook for another 30 seconds. Remove butter from heat and set aside. When cooker finishes the pressurizing cycle, turn the steam valve to “Venting” to manually release the steam. While potatoes are still warm, transfer to a large rimmed baking sheet. Place another rimmed baking sheet on top and press down very firmly, smashing the potatoes. If you need to, use a fork to roughen them up a bit (you’ll want to do this to get more crispy edges).Drizzle half of the garlic brown butter mixture over the potatoes and sprinkle 1/2 teaspoon of sea salt on them. Put them under the oven broiler for 5–8 minutes or until dark golden spots form on the potatoes.Remove potatoes and serve with remaining brown butter, sour cream, and green onions.

BACON RANCH MASHED POTATOES • SALT & LAVENDER
Nov 05, 2019 · Using a stand mixer, food processor, or electric hand mixer can yield mashed potatoes that are too much on the gummy side if you over-mix them.
