Why am I calling these ultimate? First off, I love grilled cheese sandwiches.

Number Of Ingredients 8

2 slices To 3 Slices Bacon, Cut In Half
1/2 tbsp. Unsalted Butter, Plus More To Spread On Bread
1 Large Egg
Salt And Pepper
2 slices Sandwich Bread
1/4 c. Shredded Sharp Cheddar Cheese
1/2 Avocado, Sliced
1 slice Muenster Or Swiss Cheese

Steps:

  • Cook the bacon and drain on a paper towel-lined plate. Allow to cool.In a small skillet on medium heat, add unsalted butter. Once it melts, add an egg and season with salt and pepper. Cook egg for 2 minutes, and then flip over with a rubber spatula. Cook for another 45 seconds and then remove from the pan. Place egg on a plate and set aside.Butter one side of each slice of bread with spreadable butter. Place a nonstick skillet on the stove and turn heat to medium. Place one slice of bread, buttered side down. Layer in the following order: most of the shredded cheddar cheese, bacon, and remaining cheddar cheese. Add the egg, sliced avocado, the slice of Muenster or Swiss cheese, and the second slice of bread with the buttered side up. Cook for 5 minutes. Using a spatula, gently flatten the sandwich. Flip over carefully and cook for another 3--4 minutes.Slice the sandwich and serve immediately.

1 tbsp. Butter
1 whole Medium Onion, Halved And Sliced
4 slices Bacon, Cut In Half
2 tbsp. Mayonnaise
Several Dashes Hot Sauce (I Used Louisiana)
2 slices Sandwich Bread
3 whole Hard Boiled Eggs, Peeled And Sliced
Salt And Pepper, to taste
2 slices Cheese, Any Variety (I Used Swiss And Monterey Jack)
More Butter, For Grilling

Steps:

  • Melt the butter in a skillet over medium-low heat and cook the onions low and slow for about 20 minutes, stirring frequently. Remove them to a place when they're deep golden brown and soft.Fry the bacon in the same skillet until slightly crisp. Remove to a paper towel to drain.Combine the mayonnaise and the hot sauce and stir. Taste and add more hot sauce if needed.Sprinkle the sliced eggs generously with salt and pepper. To assemble, spread one side of each piece of bread with the spicy mayo. Build the sandwich however you wish: eggs, bacon, cheese, onions, more eggs, more cheese. Spread one side of the assembled sandwich with softened butter and put it butter-side down on a griddle or skillet over medium-low heat. Spread the top side with butter, then continue grilling the sandwich until the bread is golden and slightly crisp and the filling is warm/cheese is melted. Cut in half with a sharp serrated knife and share with a loved one!

  • Heat a nonstick or iron skillet over medium-low heat. Spread one side of both pieces of bread with a small amount of softened butter. Sprinkle a small amount of grated cheese on each slice---just enough to stick to the butter. Turn one piece over and place a larger amount of cheese on top (this will be the filling). Place the other piece on top. Carefully transfer it to the skillet and cook on both sides until the middle filling is melted and gooey (watch to make sure the surface doesn't burn! It should be nice deep golden brown.)Slice in half and dig in!

  • First we are going to make the special sauce. Measure 1 tablespoon of Dijon mustard and 1 tablespoon of mayonnaise and mix the together in a small bowl. That’s it! That’s the special sauce. Mix it together well and then spread a very thin layer onto the inside of both pieces of bread.Now slice a nice ripe tomato. Thinly slice a red onion. Place two slices of tomato on one piece of bread and two slices of mild cheddar on the other slice. On top of the tomatoes place several slices of red onion followed by two sliced of provolone.Open your can of whole green chilies (or if you have roasted your own fresh chilies, those are fabulous as well!) and lay one or two slices on top of the provolone. Now very carefully put the two halves of this glorious sandwich together.Now, are you ready? Spread a ridiculous, fattening and obscene amount of butter on top of the bread. Don’t miss a single centimeter. Flip the sandwich over and repeat the Obscene Butter Process on the other side.Meanwhile, heat a skillet (non-stick is preferable here) over LOW heat.
