I use lard for my crusts because I love the rich flavor and short texture, but an all-butter dough results in an even flakier crust, should you choose to substitute more butter for the lard here.

Yield makes enough for two 9-inch pie crusts

Number Of Ingredients 5

2 cups all-purpose flour, plus more for rolling
½ teaspoon salt
1 stick (4 ounces) butter, cut into (½-inch) pieces and chilled
¼ cup lard or shortening, cut into (½-inch) pieces and chilled
8 to 10 tablespoons ice-cold water

Steps:

  • In a large bowl, whisk together the flour and salt. Sprinkle half of the butter and lard over the flour and use your fingertips, a pastry blender, or two knives to cut and mix until the mixture resembles large peas. Sprinkle in the remaining butter and lard and cut and mix to coarse crumbs. Sprinkle the dough with ice water, 1 tablespoon at a time, and use a fork to lightly mix until the dough just comes together and pulls away from the sides of the bowl. Gather the dough into a ball. Divide the ball in half. Press into two 1-inch-thick discs and wrap in plastic. Refrigerate for 30 minutes before rolling, or freeze for later use.
  • Preheat the oven to 375°F.
  • Roll out the dough on a lightly floured surface to about 12 inches in diameter. Drape the dough over the rolling pin or fold it into quarters and transfer to a 9-inch pie plate. Press the pastry evenly into the pan, without stretching to fit. Trim the edges and crimp decoratively, as desired. Prick the crust all over with the tines of a fork. Cut parchment paper to fit the bottom and halfway up the sides of the pan. Line the pie shell with the paper. Pour in pie weights, uncooked rice, or dried beans to cover the bottom and sides of the crust. Bake for 12 minutes. Remove the paper and weights and bake the crust 5 minutes longer for a partially baked crust, or 10 minutes longer for a fully baked crust, until it looks dry and crisp.

This is a relatively new recipe at my house. I got it from an old friend who knows how much my oldest child and my dad love sweet potato pies. He told me to try this crust out and see how they like it. Well, it is a new oft requested dessert at my house and my daddy has become an expert at it. JUST FYI, you can use pumpkin instead of sweet potatoes for a pumpkin pie and it is really good too.

3/4 cup flour
1/2 teaspoon salt
1/2 cup pecans, very finely ground
1/4 cup unsalted butter
1/4 cup vegetable oil
15 tablespoons water
3/4 cup brown sugar, firmly packed
1/4 cup sugar
1 tablespoon flour
1 tablespoon molasses
1 1/2 teaspoons cinnamon
1 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 cups sweet potatoes (canned or freshly cooked)
3 eggs, lightly beaten
1 3/4 cups half-and-half cream

Steps:

  • For crust:.
  • In a large bowl, stir together flour, pecans and salt.
  • With a pastry blender or fork, cut in butter until mixture resembles coarse crumbs.
  • Add oil slowly, continuing to mix with pastry blender or fork.
  • Add water 1 tablespoon at a time, using only the amount you need until dough follows blender or fork around bowl.
  • Do not overwork dough.
  • Form into a ball, cover and let set in refrigerator while preparing filling.
  • For the filling:.
  • Mix all ingredients except eggs and half & Half and stir well.
  • Mix eggs and half & half into this mixture, then slowly fold into sweet potato mixture.
  • Assembling the pie:.
  • On lightly floured surface, roll crust to fit pie pan.
  • Place in pan and flute edges.
  • Pour filling into prepared pie shell and bake at 375°F for 35–40 minutes. Cover the edges with foil or a pie rim if they start to get too brown before the pie is set in the middle.

Draw lines with a paring knife on the leaf cut-outs. Be careful to not cut through the dough. Brush the edge of the first pie crust lightly with water. Lay the leaves, overlapping slightly, onto the crust edge and press down gently. Cover the pie crust edges with foil or a pie shield so the edges don’t over-brown.
