Ingredients

1 1/2 cups Gold Medal™ all-purpose flour
3 tablespoons granulated sugar
3/4 cup butter or margarine, softened
3 eggs, separated
2 1/2 cups packed light brown sugar
1 teaspoon vanilla
1/2 teaspoon salt
1 cup chopped pecans
3/4 cup flaked coconut
2 tablespoons powdered sugar

Steps:

Heat oven to 375°F. Grease 13x9-inch pan with butter.
In medium bowl, mix flour, granulated sugar and butter. Press mixture in bottom of pan. Bake 12 to 14 minutes or until light brown.
Meanwhile, in large bowl, beat egg yolks, brown sugar, vanilla and salt with electric mixer. Stir in pecans and coconut. In small bowl, beat egg whites with electric mixer until foamy. Fold into egg yolk mixture.
Remove partially baked crust from oven. Spread filling evenly over crust. Reduce oven temperature to 350°F.
Bake 25 to 30 minutes or until deep golden brown and center is set. Sprinkle powdered sugar over bars. Cool on cooling rack. Cut into 6 rows by 6 rows.

This recipe comes from the book "Chocolate Chip Cookie Murder" by Joanne Fluke. I read the book while on vacation this summer & enjoyed it. I want to pass the book on to my swap partner in the Used Media Swap. I'm posting the recipe here even though I have not made the chews yet. I hope to make them soon but, if you make them first, please post a review & let us know how good they are. The author did not indicate how many servings this recipe makes so I guessed. I will update when I know for sure.

Ingredients

1 cup butter
3 cups brown sugar
4 eggs, beaten with a fork
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons vanilla
2 cups pecans, finely chopped
4 cups flour

Steps:

Preheat oven to 350 degrees, rack in middle position.
Melt butter and.
add brown sugar.
Mix well and let cool.
Add beaten eggs and mix.
Add salt, baking soda, vanilla and nuts.
Mix well.
Add flour.
Mix until flour is thoroughly distributed.
Form dough into balls the size of a walnut with shell.
Place them on a greased cookie sheet, 12 to a standard sheet.
Press them down with a spatula sprayed with Pam (or greased).
Bake at 350 degrees for 10-12 minutes.
Allow cookies to set up on sheet for one minute.
Remove to a wire rack to finish cooling.
Eat & enjoy.

COFFEE PECAN CHEWS | JUST A PINCH RECIPES

This is a secret family recipe so don't tell my mom I posted it. This recipe spans at least 3 generations of my family. I have no idea how old it is or who or where my grandmother got the recipe from. I do know that the recipe that my mom wrote out for me calls for butter or "oleo" and my grandmother always said that she never used anything but butter. "No matter how bad the Depression got, we always used butter, she would say". I've ONLY used butter because of this. I usually have to explain "its like a brownie".
