2 lbs powdered sugar
1/2 cup butter
smucker's peanut butter
evaporated milk

Steps:

  • Start by combining a few ingredients. Pour sugar into a large bowl.
  • Than add the butter and slowly add drops of evaporated milk.
  • Stir together slowly until it forms a ball.
  • Place in center of wax paper that has been sprinkled with powdered sugar.
  • Roll out until it resembles a square.
  • Then stir peanut butter until smooth enough to spread.
  • Using back of the spoon, scoop out some peanut butter and smooth onto sugar mixture, moving towards the edge.
  • Now you should take hold of the end of the wax paper and slowly roll the mixture up until it resembles a jelly roll.
  • Place your peanut butter roll onto a plate and freeze for 30 minutes, since this is the best way to slice it. Enjoy!

This is a recipe handed down through my family from generations, it seems only people from Kentucky seem to know what Peanut butter roll is.

Number Of Ingredients 8

3 cups sugar
1/2 cup white corn syrup
1/2 cup water
1 dash salt
1 teaspoon vanilla
1/2 cup confectioners' sugar
3 large egg whites
1 cup peanut butter

Steps:

  • In a sauce pan mix sugar, corn syrup, water and salt to a boil, stirring occasionally so that it does not stick bring to a soft ball stage or 115 degrees on a candy thermometer. While mixture is cooking beat egg whites until peaks form, once syrup mixture is to the soft ball stage slowly pour over the egg whites in the mixer. Add vanilla, This is when your kitchen aid is your best friend. Continue mixing until the shinny look is no longer on the mixture and has cooled some. Place wax paper out and put some conf sugar on the paper, place the mixture on the was paper and roll out with a rolling pin into a rectangle, spread peanut butter on the white mixture, use the edge of the wax paper to roll into a long roll, allow to cool some more then slice.
