1/2 cup of butter or Imperial BLOCK margarine
1/2 cup of brown sugar (packed)
1/2 cup of granulated sugar
1 large egg
1/2 cup of smooth or crunchy peanut butter
1/2 teaspoon salt
1/2 teaspoon baking soda
1 cup all-purpose flour
1/2 teaspoon vanilla
1/2 cup chopped peanuts (optional)

Steps:

  • "Preheat oven to 375 degrees F. Cream together butter/margarine and sugars until blended. Blend in egg, peanut butter and vanilla. In a separate bowl, mix together flour, baking soda and salt; then stir into batter mixture. Stir in chopped peanuts (optional) Roll into 1 inch balls and place 2 inches apart on ungreased cookie sheet. Flatten each ball with a fork dipped in sugar, making a criss-cross pattern. Bake for 10-12 minutes or until cookies begin to brown. "

This is a great soft peanut butter cookie!  My husband’s comment was that the peanut butter taste was not so overwhelming as most cookies of this type... very nice.

1/2 cup(s) peanut butter, creamy
1/2 cup(s) sugar (plus additional for rolling cookies in before baking)
1/2 cup(s) brown sugar
1 - egg
1/2 teaspoon(s) vanilla extract, pure
1 1/4 cup(s) flour
3/4 teaspoon(s) baking soda
1/4 teaspoon(s) salt

Steps:

  • Preheat oven to 375 degrees F.
  • Combine margarine, peanut butter, sugars, egg and vanilla.
  • In a separate bowl sift together dry ingredients and add to wet mixture.
  • Form into small balls, roll in remaining sugar and flatten with a fork... creating a criss-cross design.
  • Bake 10-12 minutes until practically perfect.
  • Note: You can substitute butter for the margarine, but I actually prefer the reduced-fat margarine in this recipe. Also, be careful not to over-bake. These cookies are best when they're a little under-done.
