Total Time 1 hours 10 minutes

Prep Time 30 minutes

Cook Time 40 minutes

Yield 6 serving(s)

Number Of Ingredients 12

8 tablespoons unsalted butter, cut into big chunks (chilled but not refrigerator hard)
1/3 cup sugar, plus
2 tablespoons sugar
1 cup all-purpose flour
2 tablespoons all-purpose flour
1 pinch salt
1 lb peach, peeled, halved, and cut into 1/2-inch wedges
1 lb large firm rip fig, stems trimmed, cut into 1/2-inch wedges
1 tablespoon fresh lime juice
1/2 teaspoon ground cinnamon
powdered sugar
vanilla ice cream

Steps:

  • Add the butter and 1/3 cup sugar to a large bowl.
  • Using an electric mixer, beat about 3 minutes, or until well combined.
  • Add in 1 cup flour and salt; beat on low speed just until the flour is incorporated; the mixture should be dry and crumbly.
  • Scrape the flour from the bottom and edges of the bowl, pressing it into the pastry.
  • The pastry should still be crumbly.
  • Refrigerate the pastry until ready to use.
  • Combine the peaches and figs in a big bowl.
  • Add in the lime juice; toss to blend.
  • In a smaller bowl, mix together the 2 tablespoons flour and 2 tablespoons sugar and the cinnamon; stir to blend.
  • Sprinkle the cinnamon/sugar/flour mixture over the fruit.
  • Fold gently, just to blend without crushing the fruit.
  • Spoon the fruit into a lightly buttered 1 1/2 to 2 quart shallow dish.
  • Sprinkle the cold pastry crumbs evenly over the fruit.
  • Bake in a 350°F oven for about 35 to 40 minutes or the top is golden brown and the fruit bubbly.
  • Let cool slightly.
  • Sprinkle with powdered sugar and serve warm with ice cream.

EASY PEACH COBBLER RECIPE | MYRECIPES
What could be a more perfect ending to a summertime meal than easy peach cobbler? Savor the flavors of summer with sliced fresh peaches cooking away with butter and spices. The topping can made from pantry ingredients you have on hand and peaches can easily be substituted with any fruit you have depending on the time of year. The tang of the lemon juice paired with the sweetness of the peaches is perfectly balanced with the crisp topping. Want to make dessert even better? A dollop of fresh whipped cream or cold vanilla ice cream truly makes it the perfect way to end a summer night.

GLUTEN-FREE PEACH COBBLER RECIPE | SOUTHERN LIVING
Summertime without peach cobbler is like a front porch without a swing. Sure, it’s nice, but everybody knows it’s missing something. This foolproof recipe guarantees that everyone—including gluten-intolerant Cousin Larry—can have his peach cobbler and eat it too. There’s no need to advertise to the old-school, no-substitutes-allowed sticklers that it’s a gluten-free dessert, either: We would be willing to bet Aunt Susie won’t even be able to tell the difference. (Our Test Kitchen pros suggest Cup4Cup Multipurpose Flour, as it bakes up with almost the same texture of a gluten product.) Our culinary experts also recommend layering the peach mixture and batter onto the butter in the hot skillet, rather than stirring all of the ingredients together, as the individual layers melding together in the oven is what really makes the buttery, caramel-y concoction sing. Plus, the cobbler only takes 15 minutes to prep, so pop it in the oven, set a timer, and use that 45 minutes of baking time (and 5 minutes of cooling time) to go hang that sorely missed swing on the front porch. Sweet summertime, indeed.
