This is a classic Andhra preparation. Typical greens to use are thotakoora (amaranth) and spinach (palak koora). Serve with rice and Majjiga Pulusu (buttermilk pulusu) or Menthi Majjiga (buttermilk with fenugreek).

1 cup hulled, split pigeon peas (toor dal)
2 cups water
2 cups water
½ teaspoon ground turmeric
salt, to taste
1 (8 ounce) bunch amaranth greens, chopped
2 teaspoons cooking oil
1 teaspoon skinned split black lentils (urad dal)
1 teaspoon mustard seed
1 teaspoon cumin seed
4 dried red chile peppers
1 pinch asafoetida powder
2 green chile peppers, cut into large chunks
1 sprig fresh curry leaves

Steps:

  • Cook the pigeon peas with 2 cups water in a pressure cooker until the water is absorbed and the peas are tender, about 5 minutes.
  • Bring 2 cups of water to a boil with the turmeric and salt; add the amaranth greens and cook until tender, about 5 minutes; drain. Stir the cooked peas into the greens; set aside.
  • Heat the oil in a small skillet; cook the lentils, mustard seed, cumin seed, and red chile peppers in the oil until the seeds begin to splutter. Add the green chile peppers, curry leaves, and asafoetida powder and continue cooking another 30 seconds; immediately stir into the peas and greens.

Palakura Pappu - Delightful Vegetarian Dishes for all vegans image

Palakura Pappu is popular and delicious dish in Andhra Cuisine. This recipe is easy to prepare. In Telugu Palakura means Palak or Spinach., Pappu means Dal or lentils. Palakura Pappu can serve with hot rice for lunch or dinner. It is a tasty side dish for chapatis or pulkas. The main ingredient of this recipe are Toor dal and Spinach. As for the simple recipe, just pressure cook the dal first. Then temper the dal with spices and add the Palak as well as the cooked dal and let it simmer. We also add tamarind to this dal which give it a nice unique taste. Palakura Pappu is very mild on stomach, so it can be given to older people too . It is good to feed kids because spinach and dal are rich in protein. Spinach is low in calories and rich in magnesium, Palakura Pappu also excellent source of vitamin K. This recipe is diabetic friendly.

250 Palakura / Spinach
1/2 Tovar Dal
1 or 2 Green Chilli
1 Salt
1 Onion ( medium size)
1 Tomato ( big Size)
6 Cloves garlic
1 Mustard seed
3 to 4 Red Chilly
1 Tamarind
1 Samber powder

Steps:

  • - Clean and wash the Palakura/Spinach.
  • - Chop the Palak into small pieces.
  • - Soak the dal, add onions, green chilly and tomatoes. - Pressure cook for 3 whistle..
  • - When the pressure release, open the lid of the cooker. - Now mash the dal well.
  • - Heat the pan add oil cumin seeds, mustard seed, garlic and red dry chilly
  • - Now add the Palak to it and mix well.
  • - Now add Tamarind water to it.
  • - Add 1tbs of Samber powder and salt and mix well.
  • - Once the raw smells goes off add the dal to it .
  • - Boil the mixture to semi solid texture. If it too thick can add some water.
  • - Palakura Pappu is ready to eat. Serve with hot steamed rice.
