I tried an omelet that contained brie, bacon and apples and thought it would be tasty as a breakfast panini—so I created this recipe! —Kathy Harding, Richmond, Missouri

- In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain., Meanwhile, heat butter in a large skillet over medium heat. Add eggs; cook and stir until set., Place eggs on two slices of bread; sprinkle with salt and pepper. Layer with cheese, apple, bacon, spinach and remaining bread. Butter outsides of sandwiches. , Cook on a panini maker or indoor grill for 3-4 minutes or until bread is browned and cheese is melted.

- To make the paninis: While preparing sandwiches, place a cast iron panini press or a foil-wrapped brick on hot side of grill and cover. Place a single layer of potatoes on 4 pieces of bread. Top potatoes with scrambled eggs, a provolone cheese, and bacon. Spread a layer of rosemary mayonnaise on each of the 4 remaining slices of bread and place bread on top of sandwiches. Working in batches as necessary, place sandwiches close to, but not directly over, the fire. Place panini press or brick on top of sandwiches, cover grill, and cook until sandwich is heated through and well compressed, about 3 to 5 minutes. Transfer sandwiches to a plate, cut into two pieces, and serve immediately.
