3 tablespoons unsalted butter
1 small onion, cut into 1/4-inch dice
1 cup orzo
2 cups low-sodium chicken broth
Kosher salt and freshly ground pepper

Steps:

  • In a large saucepan, melt the butter. Add the onion and cook over moderately high heat until tender, about 4 minutes. Add the orzo and cook, stirring frequently, until lightly toasted, about 3 minutes. Add the chicken broth and 1 teaspoon of salt and bring to a simmer. Cover and cook over low heat until the orzo is tender, about 18 minutes. Season with salt and pepper and serve.

1/2 pound sliced fresh mushrooms
1 small onion, finely chopped
2 tablespoons olive oil
2 garlic cloves, minced
1 can (14-1/2 ounces) chicken broth
1 cup uncooked orzo pasta
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons minced fresh parsley

Steps:

  • In a large saucepan, saute mushrooms and onion in oil until tender. Add garlic; cook and stir 1 minute longer. Add the broth, orzo, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 10-14 minutes or until pasta is tender. Stir in parsley.
