Steps:
- Preheat oven to 350 degrees F (180 degrees C).
- Peel the Persimmon (2) carefully and add them to a blender and puree.
- Dissolve the Baking Soda (1 teaspoon) in the persimmon and set aside.
- Sift All-Purpose Flour (2 cup), Ground Cinnamon (1/2 teaspoon), Ground Cloves (1/2 teaspoon), Ground Nutmeg (1/2 teaspoon) and Salt (1/2 teaspoon) together and set aside.
- Cream together Butter (1/2 cup) and Granulated Sugar (1 cup) until fluffy.
- Beat in Egg (1).
- Add in the persimmon mixture.
- Stir in dry ingredients slowly, making sure they are combined well.
- Stir in Pecans (1 cup).
- Line cookie sheet with parchment paper. Drop mixture by the spoonful on the cookie sheet. Bake for 15 minutes.
- Let cool and enjoy!
