60 grams ground almonds (peeled)
110 grams powdered sugar
2 egg whites
20 grams sugar
orange Food coloring
0.25 teaspoon ground ginger
100 grams sugar
100 milliliters Orange juice
100 grams butter
1 generous pinch ground ginger

Steps:

  • Preheat the oven to 150°C (approximately 300°F).
  • For the macarons, grind the almonds with the powdered sugar and sift through a fine mesh sieve onto a baking sheet. Bake in the oven for 5-7 minutes and let cool.
  • Beat the egg whites until stiff, then sprinkle in the sugar. Add a few drops of orange coloring and beat for a few seconds more. Add the almond mixture and fold in, together with the ginger. Spoon mixture into a piping bag and pipe about 30 circles onto a baking sheet lined with parchment paper. Let dry about 1 hour. Then bake in the oven (again at 150 ° C) (approximately 300°F) for 10-12 minutes. Set aside to cool.
  • For the filling, mix the sugar with 2 tablespoons water. Caramelize in a saucepan and pour in the orange juice. Simmer until the sugar has dissolved. Stir in the butter, add the ginger and refrigerate until cool. Spread the bottom macaron with the filling and place a second on top.
