Super Lemony Olive Oil Cake Recipe | Bon Appétit image

When life gives you lemons, make Mina Stone's irresistibly moist and zesty olive oil cake.

Provided by Mina Stone

Yield 10–12 servings

Number Of Ingredients 12

1½ cups extra-virgin olive oil, plus more for pan
3 large eggs
1¼ cups (250 g) plus 1 Tbsp. granulated sugar
1¼ cups whole milk
2 tsp. vanilla extract
Zest and juice of 2 lemons; plus more zest for serving (optional)
2 cups (250 g) all-purpose flour
1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt
½ tsp. baking powder
½ tsp. baking soda
Powdered sugar (for serving)
A 9"-diameter springform pan

Steps:

  • Preheat oven to 350°. Lightly oil pan with a pastry brush. Line bottom with a parchment paper round and brush parchment with oil. Whisk eggs, 1½ cups oil, and 1¼ cups sugar in a medium bowl until smooth. Add milk, vanilla, and zest and juice of 2 lemons and whisk to combine.
  • Whisk flour, salt, baking powder, and baking soda in a large bowl to combine. Make a well in the center and gradually pour egg mixture into well. Whisk, using circular motions to slowly incorporate egg mixture, until batter is mostly smooth (some lumps are okay). Scrape batter into prepared pan and smooth surface. Sprinkle remaining 1 Tbsp. sugar over.
  • Bake cake until top is golden brown and a tester inserted into the center comes out clean, about 50 minutes. Transfer pan to a wire rack and let cake cool before unmolding.
  • Just before serving, dust cake with powdered sugar and top with more lemon zest if you have it. Do ahead: Cake can be baked 3 days ahead. Store tightly wrapped at room temperature.

Even die-hard butter devotees admit that olive oil makes exceptionally good cakes. This olive oil cake only improves the longer it sits (not that it’ll last that long).

1¼ cups plus 2 tablespoons extra-virgin olive oil; plus more for pan
1 cup plus 2 tablespoons sugar; plus more
2 cups cake flour
⅓ cup almond flour or meal or fine-grind cornmeal
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
3 tablespoons amaretto, Grand Marnier, sweet vermouth, or other liqueur
1 tablespoon finely grated lemon zest
3 tablespoons fresh lemon juice
2 teaspoons vanilla extract
3 large eggs
A 9"-diameter springform pan

Steps:

  • Preheat oven to 400°. Drizzle bottom and sides of pan with oil and use your fingers to coat. Line bottom with a round of parchment paper and smooth to eliminate air bubbles; coat parchment with more oil. Generously sprinkle pan with sugar and tilt to coat in an even layer; tap out excess. Whisk cake flour, almond flour, baking powder, baking soda, and salt in a medium bowl to combine and eliminate any lumps. Stir together amaretto, lemon juice, and vanilla in a small bowl.
  • Using an electric mixer on high speed (use whisk attachment if working with a stand mixer), beat eggs, lemon zest, and 1 cup plus 2 Tbsp. sugar in a large bowl until mixture is very light, thick, pale, and falls off the whisk or beaters in a slowly dissolving ribbon, about 3 minutes if using a stand mixer and about 5 minutes if using a hand mixer. With mixer still on high speed, gradually stream in 1¼ cups oil and beat until incorporated and mixture is even thicker. Reduce mixer speed to low and add dry ingredients in 3 additions, alternating with amaretto mixture in 2 additions, beginning and ending with dry ingredients. Fold batter several times with a large rubber spatula, making sure to scrape the bottom and sides of bowl. Scrape batter into prepared pan, smooth top, and sprinkle with more sugar.
  • Place cake in oven and immediately reduce oven temperature to 350°. Bake until top is golden brown, center is firm to the touch, and a tester inserted into the center comes out clean, 40–50 minutes. Transfer pan to a wire rack and let cake cool in pan 15 minutes.
  • Poke holes all over top of cake with a toothpick or skewer and drizzle with remaining 2 Tbsp. oil; let it absorb. Run a thin knife around edges of cake and remove ring from pan. Slide cake onto rack and let cool completely. For the best flavor and texture, wrap cake in plastic and let sit at room temperature at least a day before serving. Do Ahead: Cake can be baked 4 days ahead. Store tightly wrapped at room temperature.

Add the olive oil and beat until light and well combined. Add the clementine paste and stir, then fold in the ground almonds and baking powder.

    Spoon the mixture into the prepared tin. Bake for about 50 minutes or until well risen and golden. The cake should have slightly shrunken from the sides and be springy to the touch. Leave it to cool in the tin on a wire rack while you make the syrup.

    Warm the sugar and lemon juice in a small pan until the sugar has dissolved. Make lots of small holes all over the cake with a piece of uncooked spaghetti and drizzle over the lemon syrup. Let the cake cool completely in the tin, then turn it out on to a serving plate. Dust with icing sugar and serve with whipped cream and orange segements if you like.
