Ingredients: 1.5 lbs chicken breast; 1-2 lbs u00A0flat iron or sirloin steak; 1.5u00A0 lbs extra large shrimp; 2/3 cup grapeseed oil ( or other high smoke point oil); 2/3 cup rice wine vinegar; 4 tbsp fish sauce; 4 tbsp oyster sauce; 3 tbsp hoisin sauce; 3 tbsp brown sugar; 1 tbsp soy sauce; 1 tbsp lemon grass, chopped ( or 1 Tablespoon lemongrass paste found in produce section); 1 tbsp Sambal Oelek or asian chili paste; 5 garlic cloves, chopped; 2 tsp black pepper; 1/4 cup fish sauce; 1/4 cup lime juice; 1/3 cup water; 2 tsp sugar; 3 cloves of garlic, mined; 1/2 tsp chilis, finely sliced (Thai Bird, Serrano or Jalapeno); Vietnamese Rice Paper, for wrapping rolls; lettuce leaves; carrot sticks; cucumber Sticks; slices bell peppers; Sambal Oelek Chili Sauce; Hoisin Sauce

1-2 lbs flat iron or sirloin steak
1.5 lbs extra large shrimp
