This quick & easy recipe features thick noodles tossed in an incredibly flavorful sauce, to be prepared in just 10 minutes! Topped with cilantro and green onions, these spicy and garlicky chili oil noodles are so simple to make but loaded with scrumptious flavor.

4 oz thick wheat noodles
1 tbsp green onion (chopped, more for garnish)
3 cloves garlic (minced)
1 tbsp Sichuan chili flakes (or to taste)
1 tsp chicken stock powder (or salt to taste)
2 tsp light soy sauce
1 tsp dark soy sauce
1/2 tsp Chinese black vinegar
3 tbsp vegetable oil (or any neutral oil)
cilantro, green onion, and toasted sesame seeds (for garnish)

Steps:

  • Cook noodles according to package instructions. Drain and place in a bowl. To serve the noodles cold, rinse under cold water for about a few seconds then drain.
  • Heat oil in a small pot until smoking hot. Add garlic, chili flakes, green onion, chicken stock powder (or salt), light and dark soy sauce, and Chinese black vinegar over the noodles.
  • Pour the hot oil over the noodles, aiming towards the chili flakes and garlic. Mix well to combine, adding more soy sauce if needed. Garnish with cilantro, green onion, and sesame seeds. Enjoy!

Easy Chinese noodles tossed with scallion oil-- Scallion oil noodles

Number Of Ingredients 7

1.5 cup cooking oil ( , vegetable oil or lard)
14 green onions ( , skinny scallion, cut into long segments around 5 cm long)
2 servings yellow alkaline noodle ( , or thin ramen noodles)
1 tsp. sugar
1 tsp. dark soy sauce ( , optional for darker color)
2 tbsp. light soy sauce
1 tsp. oyster sauce

Steps:

  • Cut the green onions into sections around 5-8 cm long. Add garlic clove into pieces and cut 4 slices of ginger.
  • Add oil in a wok, add garlic, scallion white and ginger along with the oil. Heat over high fire until the white part becomes slightly browned. 
  • Add green onion sections. Simmer until the green onion section becomes crispy and browned. 
  • Remove from heat and then add 1 tablespoon of Sichuan peppercorn. Let the remaining heat from the oil motivating the aroma.  Then cool down. 
  • Cook the noodle and then soak in clean water.  Drain completely and then add 1.5 tablespoons of the scallion oil. Mix well.
  • Add the basic sauce in. Mix well.  This is for 2 servings of noodles.  And lastly, top with crispy scallion. Optionally, drop 1 teaspoon of Chili oil. Serve directly.

  • 1. Cut the spring onion into 8cm-long pieces and keep white and green parts separated. Cut into thin strips.

    5. Pour the spring onion oil over the noodles, along with the soy sauce mixture. Toss to combine. To serve, sprinkle with sesame seeds.
