1 1/2 cups all-purpose flour
1 cup old fashioned oats
1/3 cup firmly packed dark brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup unsalted butter, chilled
1 large egg
1/4 cup milk
2 tablespoons molasses
1 teaspoon vanilla extract
3/4 cup diced unpeeled apple
2/3 cup chopped pitted dates

Steps:

  • Preheat oven to 375°; lightly butter a 10-inch diameter circle in the center of a baking sheet.
  • In a bowl, stir the flour, oats, brown sugar, baking powder, and salt together.
  • Cut the butter into ½ inch cubes and distribute them over the flour mixture.
  • With a pastry blender, cut in the butter until the mixture resembles coarse crumbs.
  • In a small bowl, stir the egg, milk, molasses, and vanilla together.
  • Add the milk mixture to the flour mixture and stir to combine; the dough will be sticky.
  • Stir in the apple and dates until evenly distributed.
  • Spread the dough into an 8-inch diameter circle in the center of the prepared baking sheet.
  • With a serrated knife, cut into 8 wedges; bake 22-27 minutes, or until a cake tester comes out clean.
  • Remove the baking sheet to a wire rack and cool for 10 minutes.
  • Using a spatula, transfer the scones to the wire rack to cool.
  • Recut into wedges, if necessary; serve warm.

¾ teaspoon salt
1 stick (4 ounces) butter, chilled and cut into small cubes
1?½ cups rolled oats
1 apple, cut into 1/4-inch cubes

Steps:

  • Preheat the oven to 450 degrees. In a small bowl, whisk together 1/2 cup half-and-half and the egg.
  • In a large bowl, combine the flour, sugar, baking powder and salt. Blend in the butter with your fingertips until the mixture resembles coarse crumbs. Add the oats and apple and toss. Stir in the liquid mixture until the dough just forms a ball.
  • Turn the dough out onto a floured work surface. Pat into a 7-inch round; cut into 8 wedges. Transfer to a parchment-paper-lined baking sheet and brush the tops with the remaining 1 tablespoon half-and-half. Bake until golden, about 20 minutes. Transfer to a rack to cool.
