Just like the title states, this is the easiest no-bake cheesecake. The filling has a slight citrus flavor but it's not overwhelming. It's creamy with the flavor of a traditional filling but not as firm. Paired with the fruit topping, it's a delicious flavor combination. A great no-bake dessert.

Ingredients

1 - graham cracker pie crust
1 package(s) softened cream cheese, 8 oz.
1 teaspoon(s) vanilla
1 can(s) eagle brand sweetened condensed milk (do not use a generic brand... generic brands are more watery and the cheesecake won't set up correctly)
1/3 cup(s) lemon juice
1 can(s) favorite pie filling (cherry, strawberry or blueberry), 1 lb. 5 oz.

Steps:

Beat cream cheese in mixing bowl until light and fluffy.
Add sweetened condensed milk; blend thoroughly.
Stir in lemon juice and vanilla.
Turn into the pie crust.
Cover and refrigerate 2-3 hours or until firm (can do overnight); do not freeze. Chill pie filling when chilling the cheesecake.
Top with chilled pie filling before serving.

Ingredients

2 (3.4 oz.) boxes vanilla instant pudding
2 1/2 c. milk
1 (8 oz.) container Cool Whip non-dairy whipped topping {or 3 c. homemade whipped cream}
1 (14.4 oz) box graham crackers
2 (21 oz.) cans cherry pie filling

Steps:

Place a layer of graham crackers in a 9x13" dish, completely covering the bottom.
Combine dry vanilla pudding mix and milk; beat until well mixed and beginning to thicken. Let stand for 5 minutes to thicken a bit more. Then stir in Cool Whip.
Spread half of the pudding mixture evenly over the graham crackers. Top with another layer of graham crackers, completely covering the vanilla pudding.
Spread remaining vanilla pudding mixture evenly over the graham crackers. Top with another final layer of graham crackers, completely covering the vanilla pudding.
Spoon cherry pie filling over the top layer of graham crackers. Spread evenly to completely cover graham crackers.
Cover and refrigerate at least 6 hours or over night.
Keep in mind when making this dessert, it must chill several hours or overnight before serving. Chilling allows everything to meld together and the graham crackers to soften.
Break some of the graham crackers, as needed, to completely fill the pan when making each graham cracker layer.
For the pudding mix, be sure it is instant and not the cooked kind. Also, sugar-free pudding mix works just fine, and actually seems to make the pudding layers a bit fluffier than the regular full-sugar pudding.
