MUSTARD VINAIGRETTE RECIPE - NYT COOKING



Mustard Vinaigrette Recipe - NYT Cooking image

A generous spoonful of Dijon mustard makes this vinaigrette creamy and tart. Use the dressing with sturdy salad greens like romaine or with softer lettuces like Bibb lettuce or oak leaf. The dressing is too strong to work with baby salad greens or mesclun. It’s also great with cooked vegetables like beets or broccoli and with grain salads.

Yield About 2/3 cup

Number Of Ingredients 7

1 rounded tablespoon Dijon mustard
1 1/2 tablespoons red wine vinegar or sherry vinegar
1 tablespoon fresh lemon juice
Salt
freshly ground pepper
1/2 cup extra virgin olive oil, or use half olive oil and half canola or grapeseed oil
1 small garlic clove

Steps:

  • In a small bowl or measuring cup, combine the mustard, vinegar, lemon juice, salt and pepper. Whisk in the oil.
  • Peel the garlic clove and lightly crush, or cut down to the root end with a paring knife, keeping the garlic clove intact. Place in the dressing and allow to marinate for at least 30 minutes. Remove from the dressing before serving.

Follow our step-by-step, photo illustrated recipe for making our southern style Mustard Greens. Greens dominate the fresh produce available here in the South during the winter, and we'll show you how to cook some up for a great side dish or even the main meal of the day. They'll go great with some cornbread.

Cook Time 45 minutes

Yield 4

Number Of Ingredients 6

2-3 bunches Mustard Greens, about 2 lbs.
¼ lb Bacon, Ham, Hog Jowl, or seasoning meat of choice
1 Onion, small
1 teaspoon Sugar
2 ½ cups Water
Salt and Pepper to taste

Steps:

  • Wash greens in cold water, 2 to 3 times, as needed, to remove any dirt, sand or bugs.
  • Adding salt to your water will kill any bugs that might be attached to the greens.
  • Remove any large tough stems from the greens and discard.
  • Remove greens from sink. Place in colander or large pot to drain.
  • Place greens in a large pot over Medium heat on your stove top.
  • Add one cup water.
  • Continue to add greens as they cook down, until all greens are in the pot.
  • Add sugar.
  • Cook greens, stirring often, for about 20-30 minutes.
  • Drain greens in a colander to remove water.
  • Dice the seasoning meat into about ½ inch cubes.
  • Chop the onion into small pieces.
  • Place a large skillet over Medium heat on your stove top. Add the seasoning meat.
  • Fry meat until lightly browned.
  • Add the chopped onion to the skillet. Saute until soft and tender.
  • Add drained greens to skillet.
  • Add 1½ cups water.
  • Cover skillet. Reduce heat slightly and let simmer for 10 minutes.
  • Add salt and pepper to taste. Stir well to combine.
  • Cover skillet. Simmer greens for about 20 more minutes on Medium-Low heat until greens are tender.
  • Serve warm and Enjoy.

    2. Preheat the oven 180°C/350°F/gas 4.
    3. Break the cauliflower and broccoli into florets.
    4. Cook the pasta in a large pan of boiling salted water according to the packet instructions, adding the cauliflower and broccoli for the last 4 minutes, then drain, reserving a mugful of cooking water.
    5. Remove and discard any tough stalky bits from the leafy greens, then chop into bite-sized pieces.
    6. Place a pan large enough to hold all the ingredients on a medium heat with the olive oil. Add the greens and cook for 3 minutes or until wilted.
    7. Add the white sauce, mustard (if using) and pasta and veg. Grate over the cheese and give everything a good mix, adding a splash of cooking water to loosen. Season to taste.
    8. Transfer to a large, deep baking tray (60x40cm).
    9. Tear the bread (if using) into small chunks and whiz in a food processor to chunky crumbs. Scatter the breadcrumbs over the pasta and season with a little black pepper.
    10. Bake for 10 minutes or until golden and bubbling.

Add the onions and cook, stirring occasionally, until softened, about 5 minutes more. Add the mustard greens in batches, letting each batch wilt before adding the next. Add the chicken broth, vinegar, 1/2 teaspoon salt and a few grinds of pepper. Bring to a boil over medium-high heat, then reduce the heat to low and cook, covered, until the greens are very tender, 20 to 25 minutes. Season with salt and pepper and serve with hot sauce on the side.
