Steps:

  • heat the oven to 180C. Melt the butter, sugar and honey together with the cinnamon and simmer for 2 minutes. stir in the muesli, pumpkin seeds and dried apricots.
  • pack the mixture into a lined baking sheet, cover with foil and bake for 15 minutes. leave in the tin for 10 minutes, then loosen the edges and turn out. slice into squares and serve cold.

Number Of Ingredients 9

1 cup rolled oats
½ cup sunflower seeds
½ cup pumpkin seeds
½ cup sesame seeds
Tbsp flax seeds
1 cup desiccated coconut
1 tsp ground cinnamon
Olive oil spread
½ cup rice malt syrup

Steps:

  • In a small saucepan, melt and combine olive oil spread, rice malt syrup and cinnamon.
  • In a large non-stick fry pan, combine oats, seeds and coconut and toast over a low heat for approximately 5-10 minutes.
  • Add dry mix to the oil-syrup-cinnamon mix and mix until combined*.
  • Press into a slice tin lined with baking paper and freeze for approximately 20-minutes until set.
  • Cut into squares. I cut the baking paper, lining the tin, into strips and wrap bars individually.
  • Store in freezer until use.
