- In a small bowl, whisk vinegar, honey and 4-1/2 teaspoons miso until smooth. Gradually whisk in 1/3 cup canola oil and sesame oil; set aside. , Spread remaining 4-1/2 teaspoons miso over salmon. Bake at 400° until fish just begins to flake easily with a fork, 12-15 minutes., Meanwhile, in a large skillet, heat remaining canola oil over medium heat. Add snow peas, pepper and onion; cook and stir until crisp-tender, 8-10 minutes. Add rice. Cook and stir until heated through. Remove from the heat. Stir in spinach until wilted. Serve with salmon; drizzle with reserved vinaigrette and sprinkle with sesame seeds.

- Whisk together the sake, miso paste, mirin, soy sauce, and brown sugar in a baking dish. Add the salmon, and allow to rest for 5 minutes before flipping the fillets over in the marinade to coat. Cover and refrigerate for 2 hours.
- Bring salmon to room temperature, about 15 minutes, then remove salmon from the marinade, and shake off excess. Discard the remaining marinade.
- Heat a large skillet over medium-high heat. Arrange salmon in the skillet, and cook until the fish flakes easily with a fork, about 4 minutes on each side. Transfer the fish to a plate and garnish with basil.

- Preheat oven to 400° with one rack in the lower third of the oven and one 6 inches from the broiler heat source. In a mixing bowl, combine mustard, 1 tablespoon soy sauce, juice of 1 lime (1 tablespoon) and 2 tablespoons olive oil, whisking until homogeneous. Add broccoli, coating it with the marinade. Set aside at room temperature. In another mixing bowl, combine miso, sugar, 1 teaspoon soy sauce, juice of 1 lime, and 1 tablespoon olive oil until the sugar is dissolved (you might need to mash the miso with a fork to start, and it’s okay if it’s not perfectly combined). Pat salmon dry with paper towels, season it all over with salt, then coat all over with the glaze. Place the salmon fillets skin-side down in the middle of a roasting or sheet pan and surround it with broccoli. Reserve any remaining glaze. Cook until the salmon is opaque outside with a light golden color to it, 14 to 16 minutes. Remove and turn on the broiler. Pour remaining glaze over salmon, turn over broccoli, then broil until the top is charred in spots, a light pink inside and flakes easily when touched with a fork, 2 to 4 minutes more, depending on the strength of your broiler. Top with green onions and serve with extra lime wedges.
