Number Of Ingredients 8

4 ounce Grilled or baked chicken (2/3 lean)
1 1/2 cups Yellow Squash and/or Zucchini (3 greens)
1 Tsp Olive oil (1 healthy fat)
1/2 cup 1% cottage cheese (1/3 lean)
1/2 teaspoon Garlic powder (1 condiment)
1 tablespoon Kraft grated Parmesan cheese (1 condiment)
1 tablespoon Unsweetened almond milk (1/16 condiment)
Fresh ground pepper As desired

Steps:

  • "Prepare squash. Peel your squash or leave peel on. Peel does add fiber to help aid digestion. Cuts ends off. Make noodles. Measure out 1 1/2 cups. Add 1 teaspoon olive oil to a medium skillet and cook over medium-high heat. Add spiraled squash to oil and cook until tender. Add basil and salt, pepper, or garlic powder if desired. Set aside. Alfredo Sauce: Combine remaining ingredients in small blender and mix until smooth. Pour into microwave safe dish and heat for 45 seconds- 1 minute, making sure to stir every 15 seconds. The thing to watch is the cottage cheese- it can't get too hot. It will begin to separate and become stringy and watery. Placed cooked, diced chicken over squash and pour sauce on top. 1 serving: 1 lean, 3 greens, 2.5 condiments, 1 healthy fat"
