Nacho Pizza with Masa Crust Recipe | EatingWell image

Imagine all your favorite nacho ingredients piled onto a warm, toothsome giant tortilla. Pretty good, right? Now make this healthy pizza recipe and see if you were right. Serve with lime wedges.

2 large eggs
1?? cups masa harina (see Tip) or cornmeal
½ cup sliced scallions
½ cup water
1 tablespoon chili powder
1 teaspoon garlic powder
¼ teaspoon salt
1 cup refried black beans, heated
1 cup shredded pepper Jack cheese
2 cups shredded romaine lettuce
1 medium ripe avocado, thinly sliced
¼ cup slivered red onion
½ cup pico de gallo or fresh salsa
¼ cup chopped fresh cilantro

Steps:

  • Position rack in upper third of oven; preheat to 400 degrees F. Line a large rimmed baking sheet with parchment paper.
  • Beat eggs in a medium bowl. Mix in masa (or cornmeal), scallions, water, chili powder, garlic powder and salt. Spread evenly on the prepared baking sheet into a 9-by-11-inch oval.
  • Bake the crust until lightly browned, about 10 minutes. Spread beans on the crust and sprinkle with cheese. Bake until the cheese is melted, about 5 minutes more.
  • Top the pizza with romaine, avocado, onion, pico de gallo (or salsa) and cilantro.

2 1/4 cucharaditas de levadura seca activa
1/2 cucharadita de azúcar mascabado
350 mililitros de agua tibia (45 °C)
1 cucharadita de sal
2 cucharadas de aceite de oliva
425 gramos de harina de trigo

Steps:

  • Disuelve la levadura y el azúcar mascabado en agua tibia, y deja reposar 10 minutos. Luego incorpora la sal y el aceite. Agrega mitad de la harina y mezcla bien.
  • Coloca la masa sobre una soperficie limpia y enharinada, y amasa, incorporando poco a poco más harina, hasta que no esté pegajosa. Coloca la masa en un tazón engrasado con aceite, y cubre con una toalla húmeda. Deja reposar hasta que duplique su volumen, aproximadamente 1 hora. Presiona la masa con tu puño para eliminar el aire dentro de la misma, y forma una bola. Permite que la masa se relaje durante 1 minuto antes de extenderla con el rodillo.
  • Precalienta el horno a 220 °C. Si vas a hornear la pizza en una piedra para pizza, agrega tus ingredientes favoritos y hornea inmediatamente. Si prefieres utilizar una charola para hornear, engrásala ligeramente, y deja que la masa extendida repose entre 15 y 20 minutos antes de agregarle tus ingredientes favoritos y hornearla.
  • Hornea la pizza en el horno precalentado hasta que el queso y la base se vean dorados, entre 15 y 20 minutos.
