Number Of Ingredients 5

2-1/2 pounds Idaho® potatoes, peeled, cut into chunks
1/4 cup (1/2 stick) butter, softened
1/3 cup milk
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • 1. Place potato chunks in a large soup pot and add just enough water to cover. Bring to a boil over high heat and cook 15 to 20 minutes, or until tender; drain well and place in a largebowl. 2. Add remaining ingredients and beat with an electric mixer until smooth and creamy. 3. Serve mimmediately

8 large Idaho® Gold Potatoes
½ cup soft butter
½ cup shredded Parmesan cheese
1?½ cups buttermilk
1 cup heavy cream, or more to taste
1 bunch flat leaf parsley, roughly chopped
1 teaspoon kosher salt

Steps:

  • Slice all potatoes in half, place in a large pan, and cover with cool water.
  • Bring to a boil for 25 to 35 minutes or until potatoes are tender enough to mash.
  • Drain water and add remaining ingredients. The parsley cooks slightly with the heat of the potatoes.
  • Mash by hand or with a hand mixer.
  • Add salt to taste and enjoy!
