This is the only way I prepare salmon. It is wonderful. The marinade can be frozen, too. Cooking time includes marinade step.

1/2 cup soy sauce
1/4 cup water
1/4 chicken bouillon cube
2 tablespoons olive oil
1 tablespoon brown sugar
2 teaspoons minced garlic
1/2 teaspoon ground ginger
1 1/4 lbs fish (salmon, orange roughy, swordfish, or halibut)

Steps:

  • Whisk ingredients in a bowl to make marinade.
  • Marinate fish for 30 minutes.
  • Grill fish according to your grill's instructions until fish flakes easily with a fork.
  • Baste with marinade during cooking.
  • Use 1 1/4 pounds of either salmon, orange roughy, swordfish, or halibut.

This aromatic marinade can be paired with fish, poultry, or meat. It's easy to make in a blender.

1?½ pounds fresh or frozen fish steaks or fillets (such as tuna, sea bass, swordfish, or salmon), cut 1 inch thick
6 garlic cloves, peeled and quartered
½ onion, quartered
½ red sweet pepper, quartered and seeded
¼ cup dry white wine
2 tablespoons olive oil
2 tablespoons ketchup
2 teaspoons sweet paprika
½ teaspoon salt
½ teaspoon freshly ground black pepper
¼ cup snipped fresh cilantro
1?½ cups fresh arugula

Steps:

  • Thaw fish, if frozen. Rinse fish; pat dry. Place fish in a shallow dish. Set aside. For marinade, in a blender or food processor combine the garlic, onion, sweet pepper, wine, oil, ketchup, paprika, salt, and black pepper. Cover and blend or process until finely chopped; stir in the cilantro.
  • Transfer half of the marinade to a small bowl; cover and chill until ready to serve. Spoon remaining marinade over fish; turn fish to coat. Cover and marinate in the refrigerator for 2 to 4 hours, turning fish occasionally.
  • Drain fish, discarding marinade. Grill fish on the greased rack of an uncovered grill directly over medium coals for 8 to 12 minutes or until fish flakes easily with a fork, gently turning once halfway through grilling time. If desired, serve fish over arugula. Top with reserved pepper mixture.

This is a really tasty, economical and different way to enjoy fish! Lots of flavor from the marinade and easy clean up! Winners in my book. I am sure this would work very well on any firm, mild fish. When I made this I was a little crunched in the time department so I only got to marinade it for 1 hour and it was delicious. Plan ahead! This is best marinated for at least an hour but no more than 2 hours. In a pinch, just let it marinate while the grill is heating.
