- Place the tortillas on a greased baking sheet. Combine the cheese and salsa; spread over half of each tortilla. Fold over. , Broil 4 in. from the heat for 3 minutes on each side or until golden brown. Cut into wedges.

Steps:
- Sprinkle Cheddar Cheese (1 cup) over one of the Flour Tortilla (1), leaving a half-inch around the perimeter uncovered.
- Sprinkle with Green Chili Pepper (1) and Onion (1 tablespoon) and top with the other Flour Tortilla (1).
- Melt half the Butter (1 tablespoon) in a pan on the stove over medium-low heat. Spread around, and place quesadilla onto the pan.
- Add remaining Butter (1 tablespoon) to the top of the tortilla. Let cook for several minutes over low heat. As butter softens, spread over the top tortilla. Once bottom browns and cheese is mostly melted, flip the quesadilla over.
- Let cook until cheese is fully melted, and bottom is nicely browned. Remove from pan, cut, and serve with Sour Cream (to taste) and Guacamole (to taste).

- In a large skillet over medium-high heat, heat 1 tablespoon olive oil. Add pepper and onion and season with salt and pepper. Cook until soft, 5 minutes. Transfer to a plate. Heat remaining tablespoon of olive oil in same pan over medium-high heat. Add chicken to skillet along with chili powder and cumin and season with salt and pepper. Cook, stirring occasionally, until chicken is cooked through and no pink remains. Transfer to plate with onions and peppers. Add about 1/4 cup of both cheeses to one side of your pan, then add your flour tortilla. Top the half of the tortilla sitting on top of the cheese with another sprinkling of both cheeses, cooked chicken, peppers, and onions. Fold the other half of the tortilla over and cook until all cheese is melted. Add another 1/4 cup total of cheeses to the other side of the pan, then flip quesadilla so that cheese-crusted side is facing up and the opposite side is sitting on top of the cheese melting in the skillet. When all cheese is melted, remove from skillet and slice into wedges. Repeat with remaining ingredients. Garnish with green onion and serve with sour cream for dipping.
