Fish and chips is a hot dish of English origin, consisting of battered fish, commonly Atlantic cod or haddock, and potato chips. In other countries, including the U.S., other types of fish are used, depending on availability in any given region.  Halibut, flounder, tilapia and other white fish are used. For this recipe, I used mahi-mahi fillets.  Instead of the usual potato chips or fries, I used the more healthy sweet potato.

Number Of Ingredients 15

3 to 4 pcs, Mahi-mahi fillets, washed and patted dry
1 cup, all-purpose flour
1 cup, Panko bread crumbs
1 egg, beaten
1 medium sweet potato, peeled and thinly sliced
1/2 cup Olive oil for frying
Salt and pepper to taste
Tartar sauce or your choice of dip or dressing.

Steps:

  • Roll each fillet first in flour, then the egg and finally the bread crumbs, making sure the entire fillet is even coated with the breading. Heat Olive oil in a medium pan and fry the breaded fillet until the breading turns golden brown, turning over once. Remove fried fillet from heat and place on a plate lined with paper towel to drain excess oil. Repeat for the remaining fillets. Using the same hot oil, fry the sweet potato slices until they're browned on either side. Remove from heat the drain excess oil with paper towel. Serve warm with your choice of dip or dressing.

Number Of Ingredients 6

1/2 cup olive oil
12 cloves garlic, cut into thin slices
1 tablespoon dried sage
3/4 teaspoon salt
1/2 teaspoon fresh-ground black pepper
4 mahimahi steaks, about 3/4 inch thick (about 2 pounds in all)

Steps:

  • In a small saucepan, combine the oil, garlic, sage, and 1/4 teaspoon each of the salt and pepper. Cook over low heat, stirring occasionally, until the garlic just starts to brown, 8 to 10 minutes. Don't let it brown thoroughly, or it will taste bitter. Strain the oil into a small bowl, reserving the cooked garlic.
  • Light the grill or heat the broiler. Brush some of the oil over the fish and then season with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Grill or broil the fish, basting with the oil, for 4 minutes. Turn and cook, basting with the oil, until just done, 3 to 4 minutes longer. You should have about 2 tablespoons of the flavored oil remaining.
  • To serve, drizzle the remaining oil over the fish. Top with the cooked garlic.

  • Preheat air fryer to 400°. Peel and cut potato lengthwise into 1/2-in.-thick slices; cut slices into 1/2-in.-thick sticks., In a large bowl, toss potato with oil, pepper and salt. Place potato pieces in a single layer in air-fryer basket; cook until just tender, 5-10 minutes Toss potatoes in basket to redistribute; continue to cook until lightly browned and crisp, 5-10 minutes longer. , Meanwhile, in a shallow bowl, mix flour and pepper. In another shallow bowl, whisk egg with water. In a third bowl, toss cornflakes with cheese and cayenne. Sprinkle fish with salt; dip into flour mixture to coat both sides and shake off excess. Dip in egg mixture, then in cornflake mixture, patting to help coating adhere. , Remove fries from basket; keep warm. Place fish in a single layer in air-fryer basket. Cook until fish is lightly browned and just beginning to flake easily with a fork, turning halfway through cooking, 8-10 minutes. Do not overcook. Return fries to basket to heat through. Serve immediately. If desired, serve with tartar sauce.
