3 c American cheese grated (12 oz)
1 tb Butter or Margarine Melted
1/4 ts Salt
2 tb nonfat dry milk and ?, each
1 1/4 c Boiling water
8 oz dry elbow macaroni

Steps:

  • "Heres the Lubys recipe from their Anniversary Cookbook. I found it in the Houston Chronicle archives. >From Lubys 50th Anniversary Recipe Collection (Lubys, $9.95). Cook macaroni according to package directions; drain and set aside. Heat oven to 350 degrees. In a large bowl, mix dry milk, flour and butter. Gradually add boiling water, beating constantly. Add 1.5 cups cheese and continue beating until smooth and creamy. Stir in macaroni, 1 cup of the remaining cheese and salt. Transfer to lightly greased 2-quart baking dish. Cover with foil. Bake 25 minutes. Remove foil. Sprinkle with remaining .5 cup cheese. Continue baking 1 minute, or until cheese melts. Makes 8 servings. 8 ounce dry elbow macaroni - (2 c.)
2 Tbsp. nonfat dry lowfat milk
2 Tbsp. flour
1 Tbsp. butter melted
1 1/4 c. boiling water
3 c. grated American cheese - (12 ounce) divided
1/4 tsp salt

Steps:

  • Cook macaroni according to package directions; drain and set aside. Heat oven to 350 degrees. In a large bowl, mix dry lowfat milk, flour and butter. Gradually add in boiling water, beating constantly. Add in 1 1/2 c. cheese and continue beating till smooth and creamy. Stir in macaroni, 1 c. of the remaining cheese and salt. Transfer to lightly-greased 2-qt baking dish. Cover with foil. Bake 25 min. Remove foil. Sprinkle with remaining 1/2 c. cheese. Continue baking 1 minute, or possibly till cheese melts. This recipe yields 8 servings. Comments: If desired your Macaroni and Cheese, do not miss this one. It is so much better than the stuff which comes in the blue box.
