Lemon Blondies with Lemon Glaze — Let's Dish Recipes image

These moist, gooey blondies with the consistency of a chocolate fudge brownie, except this version is bursting with lemon flavor and topped with a simple lemon glaze. These bars are sure to be become a favorite!

Number Of Ingredients 10

1 cup powdered sugar
2 tablespoons fresh lemon juice
2 teaspoons lemon zest
1 1/2 cups flour
1/2 teaspoon salt
1 cup butter
1 1/2 cups granulated sugar
1 tablespoon lemon zest
4 eggs
2 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 350 degrees. Spray an 9-inch square pan with nonstick cooking spray.
  • In a medium bowl, stir together flour and salt.
  • Using an electric mixer, cream the butter, sugar and lemon zest at medium speed until light and fluffy.
  • Add eggs, 1 at a time, beating well after each addition. Stir in 2 tablespoons lemon juice.
  • Reduce speed to low and add flour mixture, mixing until incorporated.
  • Spread batter into prepared pan and bake for about 30-35 minutes, or until toothpick inserted in center comes out clean. Cool on wire rack to room temperature.
  • Meanwhile, make the glaze by combining the powdered sugar, lemon juice and zest in a small bowl. Spread over brownies and let set for at least 10 minutes before serving.

Yield Makes a 9"x13" pan, about 20 bars

Number Of Ingredients 13

3/4 c. butter, melted
1 1/4 c. granulated sugar
1/4 c. fresh lemon juice
1 1/2 Tbsp. lemon zest
2 large eggs
1 1/2 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
Glaze:
1 1/4 c. powdered sugar
2 Tbsp. fresh lemon juice
1 tsp. lemon zest
A teaspoon of milk or so, if necessary, for thinning

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Line a 9"x13" pan with parchment paper so it hangs over the edges.
  • In a large microwave-safe bowl, melt the butter in 30 second increments in the microwave. Stir in the sugar by hand.
  • Add fresh lemon juice, lemon zest and eggs and stir by hand just until incorporated.
  • Add flour, salt and baking powder and stir by hand just until incorporated. Don't over-stir.
  • Spread batter into prepared pan and bake for approximately 18 to 20 minutes, or just until baked through and set up.
  • Allow them to cool completely, then prepare the glaze by whisking together powdered sugar, fresh lemon juice and lemon zest (and milk, if necessary, for thinning). Pour and spread over cooled bars. Let the glaze set up completely, then slice into bars and serve.
