1 (6 ounce) package stove top chicken flavor stuffing mix
1 cup water
1 1/2 lbs chicken breasts, boneless & skinless
1 (10 ounce) package frozen chopped broccoli, thawed & drained
1 (10 3/4 ounce) can condensed fat-free cream of chicken soup
1/2 cup nonfat milk
2 tablespoons parmesan cheese

Steps:

  • Preheat oven to 400 degrees.
  • Combine stuffing mix and water in large bowl. Let stand for 5 minutes.
  • Pound chicken to 1/4 inch thickness using a meat mallet.
  • Add broccoli to the stuffing and mix lightly.
  • Spread evenly on flattened chicken breasts to within 1/2 inch of the outer edges.
  • Roll up each chicken breasts starting at the short end enclosing the stuffing mixture.
  • Place the chicken, seam side down, in a 13x9 inch baking dish.
  • Mix the soup and milk and pour over the chicken.
  • Sprinkle with the cheese.
  • Bake for 30 minutes or until chicken is cooked through 170 degrees.

This was a last-minute decision for my son's birthday dinner...mixing ingredients found in the refrigerator and kitchen...the family LOVED it! Adjust filling ingredients to your taste.

Yield 4 chicken breasts

cooking spray
2 tablespoons olive oil
2 cloves garlic, chopped
½ onion, chopped
4 ounces chopped cooked ham
4 ounces fresh spinach
4 ounces cream cheese
4 ounces shredded Swiss cheese
4 large boneless chicken breast fillets
4 ounces Italian-style salad dressing
8 toothpicks, or as needed
½ sleeve round buttery crackers, crushed fine
4 ounces shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking pan with cooking spray.
  • Heat a skillet over medium heat. Add oil, garlic, and onion. Cook and stir until tender, 1 to 3 minutes. Add ham and spinach leaves and stir until wilted, about 1 minute. Chop slightly in the skillet. Remove from heat and stir in cream cheese until melted and mixture has cooled a bit. Add Swiss cheese and set filling aside.
  • Cut each chicken breast to 1/2 inch thickness and place in a bowl. Pour Italian dressing over chicken. Place 1 chicken breast on a cutting board and pound thinner. Add about 1/4 of the filling and fold chicken over to form a packet. Seal using toothpicks and place in the prepared baking pan. Repeat with remaining chicken breasts and filling.
  • Combine crushed crackers and Cheddar cheese together in a bowl. Cover filled chicken breasts with cracker mixture, mashing them into the breasts.
  • Bake in the preheated oven for 45 minutes. Remove from oven and let sit for 10 minutes before transferring from the pan to a serving platter to allow filling to set up. Remove toothpicks before serving.

  • Wash chicken and pat dry with paper towels. Rinse spinach, drain, pat dry with paper towels, chop roughly. Marinade chicken breasts in the dressing/marinade up to a few hours. Using a large sharp knife, carefully cut the chicken breasts across, not cutting all the way through. Open chicken breasts up like a book and layer on the remaining ingredients. You might not be able to fit all of it in, so just leave some, on the side. Stick a couple of wooden toothpicks in near the opening to hold it all together. Heat up a cast iron skillet, if you have one; sear chicken on both sides. Lower the heat and continue cooking on the stove until done or, if you're using an oven proof skillet, put the pan in a preheated oven at about 375 degrees. It could be completely cooked it in the oven on a baking sheet if you don't feel like searing it. Just be sure to cook it until the center reaches 165 degrees when checked with a thermometer. 4 servings.

Another Kraft recipe. Very good and so easy to make. I used bottle dressing instead of a pkg. mix and shredded Parmesan instead of grated and I also added some of the finely chopped stems. I'm also going to try these with crush french fried onions instead of the stuffing. So many possibilities! This makes a lot more than you need but it is good as a dip or spread also.
