KEY LIME CAKE RECIPE | JUST A PINCH RECIPES
I made this cake a few times for family gatherings, and for my husband. Everyone thoroughly enjoyed this cake and wanted more. This cake is soooo good because it is made from fresh key limes and from scratch.

Steps:
- Preheat oven to 350 degree and flour 3 9-inch-round cake pans. In a large bowl, mix gelatin, sugar, flour, salt, baking powder, and baking soda. Add the eggs, oil, orange juice, lemon juice, and vanilla. Divide batter evenly among the 3 pans and bake for 35 to 40 mins.Test for doneness,cool layers in pan for 5 mins., then turn onto racks. While layers are still hot, mix the lime juice and confctioners' sugar and pour over the layers on the racks,. You can pierce the layers with a fork and allow the glaze to soak in better. Let layers cool completely before icing.
- Cream butter and cream cheese, beat in confectioners' sugar until mixture is smooth and easy to spread. Spread icing between layers and on top and sides of cake. Cream cheese icing is optional. Cake is beautiful and taste great with just the glaze. I prefer icing the cake.

Since Key limes and Key lime juice can be hard to find, this recipe uses standard lime juice which can be purchased bottled or squeezed fresh. If you can find Key lime juice, bear in mind that Key limes are more tart, so you'll need only half as much juice. This recipe also requires a springform pan. - Bake cake at 350° F for 45-50 minutes, until toothpick inserted in center comes out clean. Immediately place heatproof serving plate upside down over pan; turn plate and pan over. Leave pan over cake a few minutes so brown sugar mixture drizzles over cake; remove pan. Serve warm. Store cake loosely covered.
