MA LA CHICKEN RECIPE - CHINESE.FOOD.COM

I used to enjoy having this by a local Malaysian chef who also doubled as a chef for a Japanese steakhouse. This is not quite like his, but close. He will not give up the recipe (no surprise there!) so I have had to work it out on my own.

Number Of Ingredients 12

1 1/2 lbs boneless chicken thighs
1/2 cup cornstarch (as needed)
oil (as needed)
6 dried hot Thai red chili peppers (6 to 8)
12 ounces white mushrooms, quartered
1 onion, chopped (or several scallions)
1/2 cup chicken broth
1 tablespoon soy sauce
2 tablespoons szechuan hot bean sauce
1 teaspoon white pepper
1 teaspoon ground szechuan peppercorns
1 teaspoon cayenne pepper (optional)

Steps:

  • Cut chicken into small dice and dredge in cornstarch, shaking off.
  • excess.
  • Heat enough oil in a wok or deep skillet to fry chicken until it is.

  • Heat 1-2 tbs oil in wok and add chiles, cooking just for a moment,.
  • then add mushrooms and onions, cooking until onions are softened.
  • Add cooked chicken back to pan.
  • Mix the chicken broth with soy sauce, hot bean paste, cayenne pepper,.
  • white pepper and schezuan peppercorns powder along with 1 tablespoons.
  • cornstarch and add to wok, stir-frying briefly until sauce thickens.
  • If sauce thickens too much, just add a little water but the sauce.
  • should be fairly dry.
  • Serve with steamed rice if desired.
  • Note: if you grind your own peppercorns, make sure you pass it through.
  • a sieve or it might be gritty.
  • You can also stir-fry the chicken instead of frying it, but the result.

This spicy Sichuan condiment is the secret to Andrew Zimmern’s Cold Peanut-Sesame Noodles recipe.

Yield about 1 cup

Number Of Ingredients 9

3/4 cup roasted peanut oil (See note)
1 tablespoon minced fresh ginger
1 star anise pod
1/2 small cinnamon stick
1 small shallot, minced
1 small garlic clove, minced
2 tablespoons Sichuan peppercorns
1/2 cup dried hot Chinese chiles
1/4 cup toasted sesame oil

Steps:

  • In a small saucepan, heat the oil over low heat to 175°. Add the ginger, star anise, cinnamon, shallot, garlic, Sichuan peppercorns and chiles and cook over moderately low heat until the oil reaches 225°. Simmer at 225° for 5 minutes, then transfer to a heatproof jar and let cool. Stir in the sesame oil.

  • Combine all ingredients in a heavy, non aluminum 1 1/2 qt saucepan. Rest a deep-fry thermometer on the rim of the pot. Over moderately low heat, bring the mix to a bubbly 225 degrees stirring occasionally. Let simmer for 15 min, checking to ensure the temperature does not rise. Remove from the heat and let stand till cold or possibly overnight. Strain the oil without pressing the solids; then, throw away the solids. A spoonful added to a salad dressing or possibly brushed on the plate on that a fish will steam or possibly on the skin of a just smoked or possibly roasted bird gives an inimitable touch of lushness. If you are a bread baker, brush a bit on your next loaf, if you are tossing pasta, drizzle a bit on the noodles just before serving.
