Low-carb slow cooker smothered pork chops with gravy are an absolutely delicious meal! The best part? It’s beyond easy to make!

Number Of Ingredients 6

4 pork chops, boneless or bone-in
3 cups beef stock
1/2 white onion, sliced
1/4 tsp xanthan gum
fresh ground black pepper, to taste
kosher salt, to taste

Steps:

  • Place pork chops, beef stock, and sliced onion into a slow cooker set to high
  • Cook for 3 hours, then remove pork chops and cover
  • Add salt and pepper to. taste to the sauce, then add the xanthan gum and stir well
  • Leave the sauce uncovered for 45 minutes to reduce
  • Add the pork chops back in, uncovered, for another 15 - 30 minutes or until the sauce has thickened into a gravy
  • Serve and enjoy!

1 pound boneless pork chops
1 (26.5 ounce) can cream of mushroom soup
1 cup diced onions
1 cup sliced fresh mushrooms
1 tablespoon garlic powder

Steps:

  • Pat pork chops dry and place into a slow cooker. Add mushroom soup, onions, sliced mushrooms, and garlic powder.
  • Cook on Low for 8 hours or High for 4 hours, until pork chops are cooked through. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
