2/3 ts White pepper
3 tb Old Bay Seasoning
3 lb Lump crabmeat, pick over
2/3 ts White pepper
1/2 c Dry mustard
2 tb Fresh basil, chop
1/4 c Lemon juice
1/4 c Light brown sugar
1/2 c Champagne vinegar
LEMON BASIL MAYONNAISE
1/2 c Grainy mustard
1/2 c Drawn or clarified butter
1 tb Dijon-style mustard
2 1/2 tb Fresh parsley, chop
5 tb Worcestershire Sauce
2 c Heavy mayo
2/3 ts Cayenne
MUSTARD MAYONNAISE
1/4 c Worcestershire
1 1/2 lg Eggs
7 oz Cracker meal
2 c Heavy mayo
2 c Ex-heavy mayonnaise

Steps:

  • "CAKES-In a bowl combine well parsley, mayo, Worcestershire and seasonings. Add eggs and cracker meal and combine well. Add crabmeat and combine gently. Form lightly into 12 patties. Preheat oven to 450~. In a castiron skillet heat butter over moderately high heat until hot but not smoking. Cook cakes, turning, until lightly browned. Put cakes on a baking sheet and bake for 10 minutes. Serve with MAYONNAISE-Combine ingredients for each mayonnaise and serve with cakes. Jordan Marsh Blueberry Muffin Cake | Just A Pinch Recipes image

When I was little, a trip to Boston wasn't complete without stopping at Jordan Marsh Dept Store. Not for the sales, but to go to their bakery for their famous Blueberry Muffins. They were wonderful! The store closed a long time ago and I thought the blueberry muffins from my childhood were lost as well. I found a recipe online for them and I now make them into a cake that I can serve as a quick snack or fancy up as an elegant dessert! Mmmm! Hope you enjoy!

2 large eggs
1/2 cup(s) softened butter
1 cup(s) granulated sugar
1/2 cup(s) milk
1/2 teaspoon(s) salt
2 cup(s) flour
2 1/2 cup(s) blueberries, fresh
2 teaspoon(s) baking powder
1 teaspoon(s) vanilla
4 tablespoon(s) sugar for tops

Steps:

  • Preheat oven to 375 degrees. Spray 8x8 or 9x13 pan with cooking spray. If you want to make them into muffins, line the muffin tins with baking cups.
  • Cream butter and sugar on low until fluffy.Beat in eggs one at a time until incorporated. Add vanilla to milk. Mix all dry ingredients together except additional sugar used to top cake/muffins. Alternate adding dry ingredients and wet ingredients till all is mixed. Fold in blueberries. I use fresh when available, but frozen are fine. Just add frozen berries to mix. Spread out in pan and sprinkle additional sugar on top of cake. Bake for 30 minutes if you are making muffins or 45 minutes if you are making the cake. A toothpick should come out clean when done and top will be golden. Cool completely before cutting.
  • If you want to serve as a fancy dessert. Heat up some Blueberry jam with a little water or blueberry wine. Poke holes in the cake and drizzle warned jam mixture over cake. Serve with whipped cream.
